Meet Anita, one of the hardworking heroes at Duchess Bake Shop. Anita is the manager at our Ritchie Market location and always has a smile waiting for her fellow staff members and our customers (even under her mask!). Anita is originally from Australia, and is one of the warmest and kindest people we know. Her family and children mean the world to her, and her favourite thing to do is bake out of her home kitchen. Meet Tricia, one of the hardworking people behind the scenes at Duchess. Tricia started with us over seven years ago in the front of house and quickly transitioned to our kitchen team, eventually moving her way up to kitchen manager. Because of her insatiable desire to learn and her eagerness to share her baking knowledge with others, we were overjoyed to welcome her in our Duchess Atelier kitchen as our lead teacher two years ago. Tricia is always in a good mood, has boundle...ss energy, is quick to help those around her and is much loved by all of her students. She's also a mom to adorable fur babies, loves Kendrick Lamar and is proud of her Irish roots. Since our teaching kitchen has been closed since March, Tricia has stepped up and helped out with answering phones, sorting delivery routes, packing orders and everything in between. The financier is a small French tea cake. Legend has it that financiers took on their rectangular shape in late-ninteenth-century Paris to look like gold bars, appealing to bankers who wanted a quick breakfast without ending up with sticky fingers. We've recently replaced our vanilla bean macaron with a tonka bean flavour and it's POPPIN'! Tonka beans are a pastry chef's dream because of their unique and wonderful flavour. Trying to describe the flavour can be difficult but we like to think that it falls somewhere between cinnamon and vanilla. Mel, one of our longtime staff, says it's one of her favourite macaron flavours ever! Available daily in the pastry case at both our 124th Street and Ritchie Market locations.

Meet Runa, one of our amazingly talented bakers. Runa has been with us for over 4 years and is much loved by everyone on our team. She's always in a good mood, has an infectious smile and is a pillar of cool and calm in our often hectic kitchen. Runa is also an extremely talented artist and painter!
