Eagles Nest Golf Club is currently seeking full time Sous Chef to provide exceptional, food preparation and presentation as well as supportive services to the Executive Chef. JOB DESCRIPTION The Sous Chef will report to the Executive Chef ensuring the highest culinary experience for guests. ... SOUS CHEF RESPONSIBILITIES: Learn and remain familiar with menu items and assume responsibility for all food rotation and proper timing of foods Work closely with the Executive Chef to ensure all items needed are in stock for the current menus Familiar with a variety of culinary food concepts and procedures Offers suggestions and creative ideas that can improve upon the kitchen’s performance. Assists with menu planning, inventory, and management of supplies. Orders food supplies. Coordinate with the Executive Chef for food preparation, presentation and proper service procedures Plan and supervise the daily operations of the kitchen Maintain cleanliness of work station and all kitchen areas Be conscience of proper storage of all food products Oversee inventory of the stations Check all food for proper consistency, flavor and temperature Coordinate workflow to ensure a smooth running operation Check food orders going out of the kitchen and food being prepared Monitor employee’s performance Communicate with Executive Chef on all problems, complaints and discrepancies Inspects food storage and directs sanitary maintenance of kitchen and storage facilities Researches new development in method and equipment for application to food service operations and makes recommendations Attend and schedule team meetings as required Trains new employees. Solves problems that arise and seizes control of issues in the kitchen. QUALIFICATIONS: Formal Training or certification in culinary studies 3 4 years of experience Working knowledge of health and sanitation regulations Knowledge of various cooking methods, ingredients, and procedures Ability to follow instructions, written and verbal Ability to deal well with change Familiarity with industry’s best practices Management skills Leadership Creativity Time-management skills Decision making Handles pressure Deals with uncertainty SALARY Salary is open and commensurate with qualifications and experience. After an extraordinary year of great golf and great fall weather, our 2020 season is slowly winding down and we’d like to thank all who joined us this year. We are optimistic the golf course can remain open later next week, and perhaps beyond, and will pause the season for a few days from Monday November 16 to Thursday November 19 to allow our turf operations department to perform fall maintenance duties. We will closely monitor next week’s weather to determine if play can resume beginning Friday November 20. Once we have a clearer picture of the weather forecast tee times will be made available both online or via phone. Stay tuned for further details.
