Sad to say, after this Saturday's Terra Winter Market, it will be a few months until we meet again outdoors, with fellow vendors, and our vibrant community. There is something deeply satisfying about culturing foods! For Tempeh, some cooked beans, a splash of vinegar, and the magic ingredient Rhizopus molds are all that is needed for the transformation to take place over a two day period. Fermentation renders the nutrient packed beans more digestable and more flavorful. The beans become knitted together by white mycelium into a sturdy "cake" that can be used in countless dishes. Harvested the last of our Kale today. Having seen a few frosts, and converted some of its starch to sucrose for anti-freeze effects, it is the tastiest of the season. Kale is a great plant choice for beginner gardeners, for its hardiness, ease of growth, and abundant harvests.
