Most often when clients purchase EPICURE baked goods, it's their first-time baking with gluten free products. Gluten free baking is a COMPLETELY different animal than baking with traditional wheat. One of the most basic rules of gluten free baking is that you do NOT just put the mix in your pan and stick it instantly in the oven.... You need to mix the batter and let it stand for about :30 minutes. This gives the starches in the mix time to bind. It’s the same idea behind making bread and doughs with traditional wheat - after you add your yeast, you set it aside for anywhere from half hour to two hours to let the yeast rise. If you do not do this, your GF batter (cake, muffins, pancakes, etc.) will not rise properly. You will experience sunken centres and have cracks all over the top.
