In an ironic twist of fate this diabetic made ALL THE CARBS yesterday! Homemade Icelandic Brown Bread, chocolate chip cookies and pancakes. It’s a common misconception that Type 1 Diabetics can’t eat sugar. It’s really about portion control, glycemic index (the bread has part whole wheat flour, pancakes have whey, cookies have oatmeal-all adding fibre to help lower the spike ), and timing (I try my best to eat three meals a day-about 5 hours apart). I count my carbs and take insulin accordingly. Sounds simple, right?!?! Ha-no. #thisisdiabetes #ilovefood #homemade #icelandic

I like having a purpose and right now it is to eat healthy and feed my family! I love to cook and wanted to share my latest invention: Tahini Parmesan Pasta 1 tablespoon olive oil 1 onion, chopped 2 cloves of garlic, minced... 2 cups of broccoli florets, chopped 2 carrots, chopped in rounds 3/4 cup lentils, rinsed and cooked 2 tablespoons Tahini 2 tablespoons Parmesan cheese, grated 2 tablespoons lemon juice 1 teaspoon lemon rind, finely grated 1 teaspoon dried basil 1 teaspoon dried oregano 1/4 cup of vegetable broth (more for sauce as needed) 3 cups of rotini pasta Salt and pepper to taste Sunflower seeds for serving. 1. Cook pasta according to package directions. 2. Chop onion and mince garlic. Heat oil in a large pan over medium heat. Cook onion and garlic for 2-5 minutes until onion is translucent. Add broccoli and carrot and cook for 4 more minutes. 3. Add lentils, tahini, Parmesan,spices, lemon juice, lemon rind, and broth to broccoli mixture. Stirring frequently bring to a low simmer. Add salt and pepper to taste. Turn heat to low. 4. Drain pasta and add to veggie mixture. Stir until sauce is mixed and warmed through.
