We love this chef's mission! And super delicious tortillas as well Repost via maiiz.nixtamal I consider myself a pioneer Chef when it comes to Tortillas in Western Canada, I don’t see many other people making Tortillas with Nixtamilized Corn. It’s not an easy job, it’s easier to just use mixing powders, but I don’t like the easy way. I want to feel proud about the Tortillas I produce, and carry on the legacy of Mexico's Intangible Cultural Heritage protected and preser...ved by UNESCO. Nixtamalized Corn is in danger of being lost to industrialization, and I feel a responsibility to reclaim it. In British Columbia my mission is to allow people to know Nixtamal and have a deeper understanding of what corn can taste like through the transformation of Nixtamalizaiton. - Chef Israel Alvarez

Repost via Yellow Point Farms It’s time to plant garlic! You’re not too late. . We will be planting our garlic right around the full moon at the end of the month, it is a planting practice using the natural gravitational pull to encourage root crops to develop good root growth. You want the garlic to develop its roots but not grow above ground before the dormant winter season. How to plant garlic:... -Plant cloves in mid-to late Autumn in a sunny location with rich, well-drained soil. Set cloves root side down 6" apart in rows 1-1/2 to 2' apart, and cover with 1-2" of fine soil. Then mulch for winter protection. We use leaves, clean straw can be used as well. -Best practice is to buy locally grown, organic garlic for the best production rate. You can buy it anytime throughout the summer and fall and store it by hanging it or setting it in a dry dark place. -On the day you're going to plant the garlic, gently remove the outer skin from the entire bulb and separate the individual cloves, taking care not to damage them. (Leave in place the thin papery skin that covers each clove.) . . Photo Cred goes to the talented Brownlee Photography
