We are so happy to now be offering tours once again! Spend an hour with one of our distillers and you’ll hear a bit about us and the history of distilling, all while sipping on a cocktail! Happy Friday! Here is a delicious new cocktail recipe for you to try this weekend! The Strawberry Mudslide tastes even better than it sounds.. Combine in a shaker with ice: 1.5oz Café Mocha Liqueur 0.5oz Strawberry Vanilla Liqueur... 1oz Cream Shake thoroughly then pour over ice, try a dusting of cocoa powder and some fresh fruit to garnish Let us know if you try this recipe out! New product! The recipe for our newest Basque Country Orange liqueur comes from local celebrity chef Roger Dufau. Roger comes from the town of Saint Jean De Luz which is in the Basque region of France, bordering Spain. Passed down through the generations, Roger was shown how to create this liqueur by his mother, Lucie. We peeled our oranges the suspended them and their zest over 95% alcohol in a sealed container for 5 weeks. The alcohol then draws out all of the delicious citrus flavours! Traditionally it is served at around 40% but we chose to keep ours at a typical liqueur alcohol content of 23%. Citrus Pink is our best selling gin. We use sweet orange, bitter orange, lemon and a generous amount of tangerine to make this amazingly refreshing gin. Just a hint of sugar enhances all of these flavours on your palette. Sugar maple is our best selling liqueur, it is so perfectly simple. Local maple syrup from our friends Gloria and Dave’s farm together with our handcrafted Komrad vodka which we make from local soft winter wheat. Local ingredients make a superior product. Our production team is key to our amazing line up of products. They take the idea of craft distilling very seriously. We are the opposite of the factory produced alcohol you may be used to. We hand pick each ingredient and sample flavours throughout the process. The batches are small and meticulously created so we end up with unique flavours that you’re only going to find here at our distillery!

Our tours offer a behind the scenes look at what goes on in the production area. We include a history of distilling in Ontario, how we produce alcohol in our grain to glass operation and a little bit about us! All while you sip a complimentary cocktail! We finish every tour with a full tasting of our product line. Cost is $25/person. Tours are offered Wed - Sun from 12-5 on the hour.

RECIPE: Autumn Citrus Cocktail (for two) A delicious cocktail that combines the inviting colours of fall, with bright citrus notes as we say so long to warmer days. Ingredients:... * 3 oz Citrus Pink Gin * 2 oz Triple Sec * 3 oz cranberry cocktail * 1 oz lemon juice * 1 oz orange juice * 1 oz simple syrup * ice How To: In a cocktail shaker, combine Citrus Pink Gin, Triple sec, cranberry cocktail, lemon juice, orange juice, and simple syrup. Top up with ice. Secure the lid on and shake vigorously. Strain into two glasses filled with ice. Garnish with frozen cranberries and a cinnamon stick! Enjoy with a fellow autumn lover.

A local spin on the famous french spirit, Cassis uses fresh local black currants from our market garden that were crushed and macerated in amethyst filtered vodka. Sweet and fruity with a hint of tartness, cassis is an excellent addition to a glass of sparkling wine in a Kir.

Delicate and floral with a touch of sweetness, Elderflower Aperitif is a beautiful expression of what Wellington County grown Elderflower can do. Built upon a base of freshly harvested local Elderflowers from our market garden which were macerated in amethyst filtered vodka, it is a versatile spirit that can add another dimension to cocktails or be at home on it’s own on ice or mixed with soda water.

As our patio is now closed for the season, we’re excited to invite you safely indoors to The Royal Room for Cocktails, with social distancing measures in place. Friday Night is locals night! Come enjoy the Distillery before the weekend crowds roll in. Our mini cocktail flights are a great way for you to try 3 different drinks at once! Open till 8:30 pm, see you then!

Citrus Pink NEW today!! We’ve brought together a lovely combo of Sweet Orange, Bitter Orange, Lemon and a large portion of Tangerine to give a slightly sweet and very citrusy Gin. This will definitely be a staple in your summer drink repertoire. Also extremely enjoyable in other seasons if you’re looking to capture sunshine in your glass! Available in our shop as of today!

Sugar Maple has been a favourite of ours (and yours!) since we launched it. We’ve had quite a handful of people tell us how much they’ve been enjoying it over ice cream this summer.. yum!! Looking forward to mixing it into warm and spicy autumn concoctions soon

Introducing: Great Expectations This is our Ontario Terroir GinWe’ve foraged in the local countryside to find stag horn sumac, for it’s citrus aspects, burdock root & sweet gale to add to the depth of flavour of this Gin. It is a true Ontario Gin of the land. Like no other offered in the province

We’ve been using locally grown certified organic garlic from @saladdaysfarm in our Spicy Caesar Vodka! Sourcing locally where possible & supporting the community we operate in is key to the integrity of our distillery. We truly believe it reflects in the taste of our spirits!!

We’re patiently waiting for our whiskey to mature in barrels... so we made Amber Rye for the time being! We use locally sourced oak that we char ourselves, then soak in the rye to smooth out the edges. Try it at the distillery or bring home a bottle
