That coffee is too fresh! Coffee that’s too fresh tastes bland and is difficult to brew. 4 - 5 days after the roast date and up to 45 days is ideal. Coffee doesn’t expire, it goes through a slow decline in deliciousness as oxygen does it’s thing. Store coffee in a sealed jar or bag and it’ll taste delicious for longer than you might expect. I won’t brew our new release Ancuyá pictured above for at least another 3 days based on the roast date. Winston and Bella howl all the way to Pacific Spirit Park. Beforehand, Kateland meets me at the roastery to fill up. I bring my Kinto Tumbler; it's half full so the coffee isn't too hot when we arrive. My tumbler fits perfectly into the side pocket of my Kånken backpack from Fjällräven. The trees are lush and green, the air is cool. The texture of the tumbler is satisfying to my hand and it never spills because of the double lid thingy. Kateland and I haven't been to th...e park recently, though, I do bring my Kinto tumbler with me on walks in the city with my girlfriend. Lowest effort improvement to brewing with the Hario V60: once you’ve added all the water to the grinds, give it a good swirl like wine in a deep wine glass. This pulls the grinds from the sides of the filter and ensures a nice flat bed once the water has drained through. What you’re doing is encouraging evenness during the brewing process which generally makes coffee sweeter. The perfect mug is a magical thing. It almost makes coffee taste even better. My favourite is this little speckle mug. They’re used as tea cups in all our cafes, but once I started drinking coffee out of it I couldn’t stop. Pro tip: I only fill my mug halfway with coffee so it cools faster.
