Agaricu...s bisporus is one of the most commonly grown species of mushroom in the world! A white button mushroom is the baby, cremini is the teen, and the portabella is the fully mature adult mushroom. As it ages it loses water content, so the portabella is the most flavourful of the bunch. A single portabella also has more potassium than a banana and is full of B vitamins! Farewell, Zeus, from all of us at Eos Natural Foods! Zeus has been the voice for Eos Natural Foods through our Facebook and Instagram pages since the summer of 2016, and what a trip it has been. This role took Zeus all over the local area to document the amazing growers, producers, and makers of the valley. Being new to the area back then, he was blown away by the creativity, kindness, and hardiness of the people in this community. We all know that Zeus likes to cook and exp...eriment in the kitchen. In the last few years he explored recipes from many genres, especially vegan and keto, and shared them on our pages. What a delicious road to travel! Big ridged chips, made with avocado oil I had these chips today and really enjoyed the large crunch that they provide. A snack so good it’s worth posting about. The first thing I look for with chips is what oils they use! Bad oils can wreck havoc in our bodies in the form of an oxidative stress. Being cooked at too high a temperature can breakdown any oil, so its best if we choose oils that can handle high heat!... Avocado is one of the highest smoke point oils out there and therefor it’s the best for roasting veg. It’s also fantastic at frying chips! Less oily and a mild tasty flavour too! Wherever you may be, I hope you have your favourite warm tea by your side The tea I’m reaching for this eve is Chaga tea. It sits lightly brewing constantly on my wood stove so that it’s ready whenever I am! This technique makes getting warm from being outside so quick and hastle free. The richness that chaga has is much like coffee in ways, similarly bold and earthy, a touch of maple and its as delicious as a hot coco.... When brewing change, remeber you only need the smallest amount, a couple of sugar cube sized chaga chunks will brew to make a dozen mugs of tea. Sometimes it’s the quick unplanned meals that turn out the best Was feeling quite hangry after breaking my fast with only chocolate Needed good sustenance so Iwhipped this up without planning it or evening caring how it turned out. A reminder that maybe logic isn’t always a necessary chef haha... I cooked up my favourite jasmin rice in the the pressure cooker. Jasmin rice has exceedingly delicious aromas, it tastes like a bouquet of flowers. It gets this distinct flavour from it freshness, unlike basmati rice which is aged to develop a bolder, earthier flavour over time. I sautéd green onions, oyster mushrooms, carrots, chillies, tofu and garlic in toasted sesame oil. Then added tamari, ginger juice, mirin, coconut sugar and some spices. The sweetest, fluffiest lemon meringue i’ve made I often make these pies for that rich zesty, mouthwatering effect that make these so unique! Usually I skip the crust and just bake the lemon curd straight in pan with the meringue topping. I do this because a crust take soooo long to prepare and isn’t by any means the star of the show. This time however, I used the Gluten Free cheesecake base recipe from two posts ago with the pumpkin squares. This base comes together quic...k with few ingredients, so much easier than a pastry crust! The crust adds a nice crumble and firm bite to an otherwise very soft desert. A combination of perfection, one that I’m going to experiment a lot more with. Also, I wanted to give you two tips i’ve learned on making the meringue: 1. Clean your mixing bowl for the meringue. The whites of the eggs are super sensitive to fats and will prevent it from whipping well. So give the bowl a good clean and dry before using it and definitly make sure no egg yoke gets in with the whites. 2. The meringue deflates quickly when you take it out the oven. The way around that is to turn OFF the oven just as it’s browning and leave the pie in there till the oven has cooled, a few hours. It’s hard to wait but its the only way i’ve found to maintain the steep peaks. Who here has tried HALVA before? A childhood favourite of mine so happy to have finally be able to stock this! . Halva is a sweet, very rich snack/desert made from sesame paste. It’s packed full of natural fats and protein making it one of the most energy dense natural snacks out there. Eatting just a small portion will satisfy you . This dish originates from Greece and is usually eaten by itself as a snack, or as a small dessert. Often you’ll see pistachios or chocolate s...wirled into it as well. .
