Beef is done! Still have 1/2 and quarters available immediately. Also will be offering the BBQ boxes this year as well. These animals were grass finished. DM or text me if you are interested.... BBQ boxes will be $150 and have steak, roasts and hamburger.

BEEF FOR SALE- PREBUY SALE ON BULK ORDERS- Erickson Agro has some grass fed farm raised steers going into the processing plant shortly. We are taking orders on full or half orders first. $2.75/ lb on the rail plus cut and wrap. Depending on the animal it will be roughly $2700 for a full beef or $1350 for a half. I posted this a few days ago and it has been an informative hit! I have had numerous people want to use the info. Fine by me - we need to continue the BEEF educ...ation. I cleaned it up a bit and changed some wording - to make it read easier and more what I thought - user friendly Print away and keep telling the story of BEEF! Check out our Tasty Affair page WORTH THE WEIGHT When it comes to beef weights, there are 3 different ones of which customers should be aware of. The first is LIVE weight. This is what the animal weighed on the hoof, or when it was alive. The next weight is HANGING weight. This is the weight that the butcher gives us after the animal has been taken back to the butcher shop to hang. The weight difference from LIVE to HANGING is from loss of blood, head, hide, hooves, viscera, lungs and heart. The HANGING weight is usually about 62% of the LIVE weight. (This percentage can vary from animal to animal with several variables). Let’s do an estimate on a 1200 pound animal. LIVE weight would have a HANGING weight of 744 pounds. 1200 pounds x 62% = 744 pounds = HANGING weight. This is the weight we base our per pound charges on. The butcher also charges cut/wrap fees based on this weight. The FINAL or TAKE HOME weight is again different. This weight is changed in 2 ways. From HANGING to TAKE HOME weight. About 4% is water weight lost during the 10-21 day period that the carcass is hung (or aged). Then about another 35% is lost during the cutting process. This amount is variable based on 2 factors, one is the amount of fat in the meat, and the other is the cuts that a customer requests. Higher fat, means more loss. Also, the more boneless cuts requested by the customer, the lower the FINAL weight. 744 pounds HANGING weight x 39% (4% water +35% loss during cutting process) = 290.16 pounds lost. 744 - 290.16 = 453.84 pounds of FINAL TAKE HOME weight. (Note - that the lower weight doesn’t mean that you are receiving less meat rather, you are receiving fewer bones). So why the hang time?? Hanging beef in a cooler for 10-21 days is recommended to improve tenderness. This process is called aging. This allows the enzymes in the meat to break down the proteins and improve eating quality. The process also allows the development of flavors associated with the aging process. Never hesitate to ask your questions to your Beef Source or your Butcher. Let your Beef Source worry about the LIVE weight - the Butcher worry about the HANGING weight - and you the Consumer worry about the FINAL TAKE HOME weight and get that cutting order just how you want it. Well with #harvest19 turning into #harvest20 and then #plant20 hit, we never had a chance to have an official Harvest crew wind up...the farm bid on a special meal from Long Branch for the school fundraiser...and last night we celebrated what we could with who we could. Thanks to Clay J Holt Dennis Erickson Mel Erickson for the farm support and especially Margo for the delicious meal and beverages...
