I finally got it right!! My youngest has been asking for meat pie, so I made the chicken pot pies, but it turned out, that wasn’t what he wanted. Then I made the beef pot pies. Still wasn’t what he wanted. So tonight I made Shepherds Pie - turns out it was exactly what he wanted! One was made with mashed cauliflower for those who are eating low carb. Christmas Eve Kitchen hack!! This blew my mind!! ADD BAKING POWDER FOR EXTRA-FLUFFY MASHED POTATOES Looking for creamy, lighter-than-air mashed potatoes that will make everyone "ooh" and "ahh" at their fluffiness? Try adding a pinch of baking powder: the heat from the potatoes mixes with the baking powder to create tiny air pockets. Yay science!... MAKE STUFFING MUFFINS When making extra stuffing, try this trick: make small "stuffin' muffins" by cooking stuffing in muffin tins. Not only are these compact stuffing bites easier to serve, but you have to admit, they also look pretty fancy! AND you can freeze them for when you are craving that festive dinner in the middle of March!
