Make the choice. When you're run down and exhausted after a stressful day and all you want to do is down a pint of Ben&Jerry's, make the choice to support and nourish your body with healthy foods (rather than feed your emotions). Today was particularly taxing so I'm giving my body a boost with spinach and sundried tomato chicken & quinoa, with a massive side of hummus and veggies and lemon water (and maybe a 'red velvet' - aka cacao + beet - muffin for dessert) ... Anyone who knows me knows how much I love my matcha. But, with busy mornings (and two children) I found myself skipping this delicious and healthy drink because it was too time consuming to make. Then I realized I can premix it! I make 5 cups worth at a time - measure out 5 serving of matcha, add about 1/4 cup of liquid (I used full fat coconut cream), whisk until all lumps are gone. Add sweetener if desired. Store in an airtight container in the fridge. And add a tablespoon or two to you mug then top with hot water and enjoy!
