House of Blessing Baby Pool results are in! I have done all the crazy calculations for the House of Blessing Baby Pool. I would like to say that for future babies, I would use a different scoring pattern, but let's just say we are happy with our 2 little angels, so there will not be any more baby pools for us! The crazy thing about this scoring system I found on the internet is that the time of day was the biggest factor in determining the score. So even though I actually g...uessed February 3rd as the date of birth and I came 3rd last place! I would like to congratulate Ross for coming in 1st place with -395 points! Second place was only 10 points behind, with -405! Oh so close! My score was -4025! The total pot was $170, so half will go to Ross and half to the House of Blessing. Thanks to those of you who participated!
Here we are at 38 weeks and 4 days! CRAZY!!! This week Baby V is the length of a stalk of rhubarb. I have a yummy low carb Rhubarb muffin recipe for you to try Rhubarb Crumble Muffins makes 12... For the Muffins: 1 cup Almond flour cup Coconut flour 6-8 Tbsp Monk Fruit granular (I used Lakanto Classic) could also substitute Swerve Granular 1 cup Rhubarb tsp Sea salt 1 tsp Baking powder cup Coconut cream could also substitute heavy cream cup Water 4 Tbsp Butter 3 large Eggs at room temperature 1 tsp Vanilla extract For the topping: cup Almond flour 2 Tbsp Hemp seeds tsp Sea salt 2 Tbsp Monk Fruit sweetener tsp Cinnamon 2 Tbsp butter To make the crumb topping 1. In a small mixing bowl, combine the almond flour, hemp seeds, Monk fruit, salt, and cinnamon. 2. Add the melted butter to the dry ingredients and using a fork, combine the two until you have small crumbs. To make the Rhubarb Muffins 1. In a large mixing bowl combine the almond flour, coconut flour, Monk fruit, salt, and baking powder. 2. Add the diced rhubarb to the dry mix ingredients and toss to coat. Set aside. 3. In another mixing bowl, whisk together the eggs, coconut cream, water, and vanilla. 4. Make a well in the dry ingredients and pour in the egg mixture, then add the melted butter. Stir to combine well. 5. Line a muffin pan with paper liners and scoop about cup of batter into the muffin pan. 6. Bake at 350F for 20-25 minutes. Or, until muffins are lightly browned on top and no crumbs stick to a toothpick when inserted into the center of the muffin. 7. Cool completely. Store in fridge up to 1 week. May be frozen for up to 3 months. 8. These are best enjoyed when completely cooled and better yet the next day after being refrigerated (if you can wait that long! I couldn’t!)

Here we are at 32 weeks!!! Apparently this week Baby V is the size of a cantaloupe or as long as a stalk of kale. It certainly feels like there is a cantaloupe lying on top of me while I do exercise demo's for clients! I couldn't decide whether I wanted to choose a kale or cantaloupe recipe, so I have provided you with one of each! Enjoy! Kale chips serves 4... 2 tsp EVOO 1-2 cloves garlic, crushed 1 red bell pepper, seeded and cut into chunks Sea salt (to taste) cup nutritional yeast cup tahini or almond butter (I used almond butter) 2 Tbsp apple cider vinegar 2 Tbsp lemon juice 1 packet stevia, to taste or stevia or monk fruit drops (optional) 1 bunch of kale *You can also add pre-soaked raw cashew pieces or sunflower seeds, which gives these an added crunch Wash and trim a bundle of kale, and ensure to dry thoroughly. Remove the centre stalk and tear leafy greens into medium-sized pieces. In a blender, mix together the first 9 ingredients to create your seasoning sauce. You may need to add a touch of water to get the right consistency (thick, but creamy). Massage the kale the seasoning sauce until evenly coated. Spread kale on a baking sheet - or a couple of baking sheets ... (covered with parchment if you prefer) - the pieces must not touch or they won’t crisp up. Bake 275 F for 25-30 minutes flipping halfway through. If you have a dehydrator, dehydrate at 130F for 10-12 hours, flipping halfway through. Smoothie Bowl serves 1 1 banana, sliced and frozen (~125g) cup cantaloupe chunks (~130g) 1 cup frozen mango chunks (140g) 1/3 cup unsweetened vanilla almond milk scoop vanilla protein powder, optional for an extra protein boost 1 Tbsp each chia seeds, hemp hearts, toasted pumpkin seeds for garnish 1-2 Tbsp pomegranate or berries for garnish 1. Place all ingredients except for the garnishes in a blender or food processor and blend until smooth. 2. Pour into a bowl and top with seeds and fruit.

Inflammation Buster Latte Recipe: 1/4 tsp each powdered ginger & turmeric + 1/2 tsp cinnamon shaken with 1/3 cup filtered water. Place in bottom of mug and add 1 cup steamed unsweetened vanilla almond milk. Sweeten with stevia or monk fruit, if desired. To all my Facebook friends, clients and workout buddies: We have decided to close our studio at Excel Fitness & Lifestyle Consultants until the week of April 6th. We must do our part to help to "flatten the curve" and kick this COVID-19 to the curb! This is not a time to sit on the couch, watching TV and feeling sorry for ourselves. This is a time to embrace all the good things we can do in our homes, such as: - Spring cleaning and organizing our rooms and kitchen cupboard... - Cooking up some healthy, nutritious & delicious meals to nourish our bodies and jack up our immune systems - Catching up with our families by doing activities together, such as: getting outdoors to walk, run and play; doing arts & crafts; playing games together; exercise & do yoga/stretches; and practice meditation together ... and don't forget to put some fun music on and dance and sing together - There's' always time around our house to sing and dance to Frozen! - Lastly, and very important to EXERCISE and move your body! This is ESSENTIAL! And EXCEL is still here to kick your butt! We are offering Online Training - privately and group sessions at a DISCOUNTED rate!
