Try this one Beetroot hummus with roasted carrot chips: 80g of uncooked beets, chopped... 150g canned chickpeas, rinsed and drained 2 tsp. Olive oil 3 TBSP. Water 1 1/2 TBSP. lemon juice Pinch Himalayan salt 4 tsp. Tahini 1 garlic clove, crushed 1 tsp. Cumin 1 tsp. Paprika 1 cup carrots, cut into chips Olive oil spray Pinch of pepper 1. Preheat oven to 350F. line a baking tray with parchment. 2. Place beetroot and carrot on tray. Spray with olive oil and season with S + P. Bake in oven 30 mins. Turning once. 3. Let beets cool and remove skin. Transfer to food processor 4. Add chickpeas, olive oil, water, lemon, tahini, garlic, cumin, paprika. Process until desired consistency. 5. Serve with carrot chips and ENJOY!
