I love to take ‘old school’ dishes, says Robin Wasicuna and elevate them. Apple dumplings paired with @ucluelet_brewing_co porter. Roll that around in your brain a little. Robin isn’t exactly sure how he wants to plate the last dish of the evening but spending the first few days on Vancouver Island has provided some inspiration. Murray McDonald @chefmurraymcdonald likes a challenge. It might be said that challenges bring out the best in this Newfoundland born chef. A chef whose career that took him around the world with the Ritz Hotel chain, Murray returned home to open the iconic @fogoislandinn. His challenge was not only creating a menu in a remote location befitting a world class @relaischateaux destination but also to assemble and train a team with a local talent pool that while eager was inexpe...rienced. There is no one who can argue with his success there. His next challenge? Murray currently draws upon his indigenous roots for inspiration at @bearfishrootberry - a pioneering First Nations restaurant at Osoyoos, B.C.’s @nkmipcellars This is Murray’s first visit to Tofino and Ucluelet although he has collaborated with @nicknutt at a @charliesburgers dinner. I told Nick I always wanted to do an alphabet menu, Murray says. It wasn’t 26 courses, he says with a laugh we put MLNOP together. Murray is easily one of the finest chefs in Canada. The safety of our team, our guests and our community is paramount. We are taking the following steps to ensure the safety of all: All events are outside (under tents if raining). All guests will be screened at entry and asked to wear a mask until seated.... Guests are seated in their own bubbles and not placed with strangers. Tables are physically distanced and guests are asked not to move around once seated. There will be 30 diners and a total of 50 people max including musicians, volunteers and chefs. All volunteers will wear masks unless eating. Liquor will be poured at a central station and walked to the guests. Each chef will speak to their dish, the sound system will be sanitized the mic between uses. Extra masks are available for those who don’t bring their own. Hand sanitizer is also available.
