Food speaks to me. What can I say? The Cashew Veggie Bites are talkative tonight.

Lots of artists work in kitchens. I'm 'supposed' to be working. My commercial kitchen is full of impatient projects, but I'm writing poems! This morning's poem. I'm reading it off the screen. Make art instead of working! As soon as a poem arrives, I love it, and want to share it. If you get something out of this poem, please tell me. I'm looking to add more material to my Spoken Word repertoire.

Once upon a time, I was making beet borscht (aka pink soup). When my son was a little bear, he loved pink soup best. One evening, as I made borscht, he pulled his stool over to the stove, climbed up, and peered into the big steaming pot. He started to cry. ... O my! What’s the matter? I asked. It’s not pink, he cried. Ah, wait for the beets, I said, and poured them into the soup. Pink soup. He stopped crying. The world just needs pink soup.

Indo Rice Salad makes a quick hot dinner! Heat 1 tbsp of your favourite oil in a heavy pan or wok, and saute rice salad over med-high heat for just a few minutes. YUM! The first step in eating 'foods that love you back' is to LOVE your food! When I eat, I love to look for the vitality in the food - whether it's Flourless Turtle Brownie or Indo Salad! Imagine the whole food, as it grew: the cocoa beans in their pods, the sugar in the cane, the greens and carrots in the field. I focus on what I can love about what I'm eating. There is vitality in everything edible, and love is the key to unlock it. Whatever you eat with YES, you eat with love!

The Food Hub is part of North Kootenay Lake Community Services Society. They help fill the gap for families and individuals experiencing hunger in our region, and support local food sustainability practices with education and services. Do you love the Feed Your Soul Foods Turtle Brownie? It's chewy dense texture is my favourite. It's organic cocoa, it's homemade caramel stirred with a wooden spoon, it has NO FLOUR. Right! No grain at all. Does that make it closer to a salad ;) ?? Coconut is the surprise ingredient, stepping in as a grain impersonator in this treat, but you will not taste coconut at all. See if you can find them at Kootenay Co-op (like a treasure hunt - they're there, but moving around merchandise locations trying to find their 'forever home' in the midst of Coop changes.) Also at Sunnyside Naturals in Kaslo. Enjoy!

It amazes me that I've never met a cashew tree, but have bought hundreds of kilograms of cashew nuts, for Indo Salad, Cashew Cauliflower Loaf, Nut Bars! Beautiful food starts with gratitude!
