For quick weeknights meals, look no farther than a stir fry! You can cook up some veggies while you’ve got the rice cooker going, or fry everything up with noodles in a pan. Here’s a quick Veggie Lo Mein recipe that you can cook up in under 30 minutes! Ingredients:... 12 tbsp oil (we prefer avocado for higher heats) 3 green onions, chopped 1 2-inch piece of ginger, chopped 3 garlic cloves, chopped 1 large carrot, julienned 1 red pepper, julienned 1 cup snow peas 2 cup spinach 56 ounces chinese egg noodles 1 tbsp vegetarian oyster sauce 1 tbsp dark soy sauce (*tamari for gluten-free) 1 tsp sesame oil 1 tsp coconut sugar (can sub regular sugar) 1 tsp sriracha 12 tbsp water or vegeteable stock as needed Instructions: Heat the oil in a large pan, then add the green onions and ginger and let cook on medium-high heat for 2 minutes. Next add the garlic, carrot, pepper and snow peas and mix everything together, letting cook for another 2-3 minutes until the veggies are tender, then add the spinach and mix until wilted. Add in the noodles and sauces and stir until everything is mixed together. If the noodles stick to the pan a bit, add 1-2 tbsp of water or vegetable stock to help deglaze. Remove from heat and serve immediately. #healthyfood #healthyeating #cleaneating #nutritionist #yyjnutrition #nutritioncoaching #healthychoices #wellness #nourish #balancedmeal #yyjhealth #victoriabc #victoriabchealth See more

PSA: if you don’t like vegetables, you’re probably just not cooking or seasoning them correctly. My dad used to steam broccoli and baby potatoes in the microwave in a bowl of water... no seasoning, not even salt or pepper! Imagine my surprise when I discovered dishes like charred maple-glazed brussel sprouts, roasted carrots with dijon vinaigrette, and stir fried Szechuan-style eggplant. My mind was blown.... Take the time to jazz up your veggies and you’ll never get bored. #healthyfood #healthyeating #cleaneating #nutritionist #yyjnutrition #nutritioncoaching #healthychoices #wellness #nourish #balancedmeal #yyjhealth #victoriabc #victoriabchealth See more
