Tonight's dinner, Vegan taco salad For the meat: 1small red onion... 1.5c cooked quinoa (about 1/2c raw) 2 cans black beans, drained & rinsed .5 pack taco seasoning 1tsp coriander 2tsp paprika 1/2c water In a large pot heat 1tbsp olive oil, add chopped red onion and cook for about 5 minutes. Add all other ingredients to the pot & cook for another 5 minutes. Easy as that! I topped min with arugula, kale, red peppers, avocado, vegan cheddar, hemp hearts, flax seed, cherry tomatoes, salsa and sour cream, and a bit or sriracha, but you can use it however you wish! TRIGGER WARNING* Did you know that 4 in 5 women suffer from some sort of disordered eating? This means that it is the norm in our society today to have a skewed relationship with food. Im taking a course about disordered eating and how to discuss these topics with clients in hopes of incorporating this into my business. ... When I discuss eating with clients, family, or friends I want you guys to understand that I have been there. I've suffered with an eating disorder in highschool. I thought for a long time that I had gotten better, but in reality I just backed up the spectrum to disordered eating, and I was there for years. Thinking that I had overcome my issues, without realizing I had just fallen into a different kind. I am so thankful. Today I can honestly say that I have a healthy relationship with food. I eat when I'm hungry. I'm not obsessive about calories, if I don't eat the best one day, I don't starve myself to make up for it the day after. I know I don't have to "earn" my food. And I allow myself the joys of French fries and frozen desserts if I feel like it. I eat well MOST of the time, and don't obsess one way or another. I got myself here and I want to help others get here too! Let me tell you, it feels GREAT. If you need help with your nutrition, keep your eyes peeled! I hopped on the trend & this was probably the tastiest thing I've made in a while FETA CHICKPEA PASTA CASSEROLE INGREDIENTS... 1 can chickpeas, drained & rinced 1 pint cherry tomatoes Handful of spinach, chopped 1block vegan feta cheese A few basil leaves- chopped Drizzle of olive oil Oregano, parsley, salt & pepper to taste Preheat oven to 350F Mix chickpeas, tomatoes, chopped spinach and basil leaves in casserole dish Place feta in center Drizzle olive oil over top Sprinkle salt, pepper, oregano and parsley. Bake for 30-40 minutes While that's in the oven, boil a pot of water & cook large she'll pasta according to directions on the box. After 40 minutes take the chickpea mixture out of the oven, Mix everything together. Stuff the mixture into the pasta shells and put them in a single layer in a second casserole dish. Now that I have your attention, here is some truth for ya.. YOU CAN NOT "MELT" FAT After adolescence the amount of fat cells we have in our bodies stay the same. There is no way to "get rid" of fat cells (unless you literally suck them out with Lipo). You can SHRINK your fat cells and you can GROW your fat cells, but you can not rid your body of them. ... As adults we have a constant number of fat cells. A significant amount die each year only to be replaced with new ones! When you lose or gain weight due to caloric intake that is just your cells shrinking or enlarging. THIS is why our diets are so important to losing/gaining/or maintaining our weight! It doesn't matter what your goal is, it always falls back on what, and how much you are putting into your bodies. Please don't fall for these "quick" fixes, people claiming they can rid your body of fat cells with a tea or a pill or whatever else they've come up with. These claims are not backed by science and are a waste of your time and your money! If it seems too good to be true, it probably is. Eat your veggies, get enough protein, and move your body!
