Low Carb Cheesecake *Bring ingredients to room temperature before starting* *You will need a spring-form cheesecake pan for optimal results* INGREDIENTS For the crust... 1 1/2 Cups almond flour 1/4 Cup Sugar-free powdered sweetener (I use the Swerve erythritol) 1 teaspoon Cinnamon 6 Tablespoons grass-fed Butter, melted Optional for pecan lovers: add 1/4 cup crushed pecans and reduce almond flour to 1 Cup For the filling 6 Packages 8 ounces full fat cream cheese (room temperature) 2 Cups Sugar-free powdered sweetener (same as above) 5 Large free-range Eggs (room temperature) 8 Ounces Sour Cream (room temperature) 1 Tablespoon Vanilla extract INSTRUCTIONS 1. Pre-heat oven to 325F. Adjust the rack to the middle of the oven. 2. Combine the crust dry ingredients in a medium bowl. Mix in the butter. 3. Pour the crust mixture into a 10 inch x 4 inch springform pan and press halfway up the sides using your fingers. Use a flat bottomed cup to press the mixture into the bottom. 4. Refrigerate the crust for at least 20 minutes to allow the butter to set. 5. In a large mixing bowl, beat the room temperature cream cheese with a hand mixer until light and fluffy. (it is helpful to make sure your cream cheese is at room temperature to avoid lumps. Placing the bowl of cream cheese in a warm water bath for 10 minutes before mixing will help) 6. Add in the sweetener a little at a time (about 1/3) and beat with the hand mixer. 7. Add in the room temperature eggs one at a time and beat until well incorporated. (eggs can also be placed in warm water bath for a couple minutes to slightly warm) 8. Add in the vanilla and room temperature sour cream and beat until just incorporated. 9. Pour the cheesecake mixture into the chilled crust and even out the top. 10. Bake in the pre-heated oven for 45-60 minutes. Check after 45 minutes. The top should no longer be glossy and the center should still be jiggly. 11. Turn off the oven and crack the door. Let the cheesecake sit in the oven for 30 minutes. 12. Remove the cheesecake from the oven run a sharp paring knife between the cheesecake and the pan to ensure the cake doesn't stick. (Do not remove the spring-form). 13. Let the cake sit on the counter for 1 hour. 14. Cover the spring-form loosely with plastic wrap and refrigerate for at least 8 hours. 15. Remove the springform pan sides 16. Slice and add preferred topping. See more
