Taco Tuesday but we’re having homemade plant based quesadillas! Easy Peasy Tortillas - 1 cup flour with more for dusting - 1/4-1/2 cup water... - 1.5 tbsp olive oil - Pinch of salt Heat pan over medium head Mix dough all together, break up into inch sized balls and press into a tortilla press or roll with a rolling pin Lay in pan for 30 seconds or so on each sized Note: these aren’t your giant store bought tortillas that last for way too long due to whatever preservative they put in them - best if used fresh! Summer nights kinda food - have you ever been to a bbq without broccoli salad? Normally loaded with sugar, fat and bacon, this healthier, plant based version won’t disappoint! Creamy and rich, created with cashews, it’ll have you going back for seconds! Here you go:... For the dressing.. 3/4 cup raw cashews, soaked 1/2 cup water 2 tbsp pure maple syrup 2 tbsp apple cider vinegar 1/2 tsp mined garlic heaping 1/2 tsp sea salt Freshly ground black pepper For the salad.. 2 large broccoli crowns (florets only), finely chopped 1 1/2 cups red grapes, halved 1/3 cup roasted salted almonds, finely chopped 3/4 cup diced red onion 1/3 cup dried cranberries or raisins How to: 1) Soak cashews in hot water for about 10 min. 2) Add cashews and the rest of dressing ingredients into a high powered blender and whip it all up until nice and creamy 3) Toss with salad ingredients and chill Enjoy! #plantbased #bbqseason #summerfoods #eatclean #dairyfree #broccoli #jerf #vegan #goodforyou

5 Min Dessert and GO! (Ok, so like 5 min prep plus 10 in the freezer) Handful of almonds, handful of walnuts, tbsp(ish) of ground flax, pinch of cocoa powder and a handful of dates in the food processor - blend blend blend until its finely chopped and sticks together easily!... Scoop and press into silicone muffin liners. Stick in the freezer for 10 min. Snap your fingers and 10 min. is up! Top with a small scoop of @maison_riveria raspberry coconut milk yogurt, sliced strawbs, coconut whip and a couple bluebs and you’re good to go! Breakfast of a pregnant lady! That’s right, we’re growing a human! Not going to lie, the first trimester sucked and food was not my friend - I may or may not have lived off of soda crackers and pasta and popsicles... but, I’m finally feeling human again and craving everything good for me (well almost everything). Loading up on protein, omega 3, and fibre (cause pregnancy constipation is a real thing ) with oatmeal, peanut butter, chia seeds, hemp hearts, ground flax seed (use a coffee grinder to grind it if you just have flax seeds - this is more useful for your body) and some frozen berries.. patiently waiting for raspberry season here in Kelowna!

Huge fan of making fresh fruit and veggie juice in my @vitamixca and quite often I’ll just drink it with the pulp in (almost like a smoothie). However once in a while I like to pour it through my nut mylk bags from @themarketbags and strain it.. but then what do you do with the pulp? I’ll tell you what.. Make these crisps! In a blender mix 3 celery stalks, 1 carrot, 1/2 a lemon (if you buy organic and have a vitamin just throw the whole half a lemon in,... peel and all), 1/2 an apple, about an inch of ginger, enough water to get it going.. between 1/2-1cup. Blend it all together and then keep blending! Pour through a nut mylk bag into a bowl or large measuring cup. Really squeeze all of the juice out.. this can be quite relaxing. Flip bag inside out and scrape pulp into a bowl and while you’re sipping on your fresh juice, add a tsp of maple syrup to the pulp and mix it all up. Roll into small inch balls and flatten to 1/8, reallllly thin. Bake in the oven around 250F for about half an hour and flip for another 20-30 min. This could take longer if they’re thicker. You could also throw them in a dehydrator!
