It’s pulled pork time! Mmmm mmmm pick your favourite rub, allow the rub to soak into the meat for an hour. Turn on your smoker to 225 degrees, add your favourite smoker chips! If your doing it in the slow cooker add 1/2 cup of apple cider vinegar on low. I change my recipe all the time but my favourite pulled pork recipe is the Carolina style. This is our second time raising pigs and this time we chose to breed Berkshire pigs, (also known as Kurobuta)They are a rare breed of pig originating from the English county of Berkshire. Berkshire pork, prized for juiciness, flavour, and tenderness, is pink-hued and heavily marbled. Its high fat content makes it suitable for long cooking and high-temperature cooking. The meat also has a slightly higher pH. Increased pH makes the meat darker, firmer, and more flavourful. The Large Black, occasionally called the Devon, Cornwall Black or Boggu, is a breed of domestic pig native to Great Britain. The meat of this animal is known for good flavours and lean quality without an excess of back fat. They are fantastic foragers and are best utilized by farmers for this particular skill.
