Fogo Island Fish 02.06.2021

Fogo Island Fish is pretty much the only fish that I use. I wholeheartedly believe in their fishing practices and how the fishers are treated and compensated. Their cod is caught with zero by-catch, using methods that are non-destructive to the ocean or the ecosystems. There are not many fisheries that can say the same. - Chris Locke, Executive Chef, Marben and The Cloak Bar On Earth Day, we're proud to shine a spotlight on Chris Locke, a chef partner who shares our values.... The Toronto-based and England-born chef is committed to using locally sourced and iconic Canadian ingredients. He showcases Canada and Ontario's bounty through his honest and challenging dishes. Pictured here, alongside Chef Locke himself, is the mouthwatering Cod Scotch Egg he created. The soft-yolked egg is encased in flakey Fogo Island cod, then finished with a crunchy coating. The snow crab fishery is in full swing on Fogo Island We purchase crab harvested by day boats, vessels that return each evening with their catch. This ensures a product that is exceptionally fresh and of the highest quality. : Alex Fradkin

Our crab fishers use conical pots with large enough holes in the netting for smaller crabs (females and young'uns) and other sea creatures to escape. This cuts waste and helps keep fish and shellfish populations healthy. This snow crab season, we want to give a hearty shout out to the Fogo Island fishers who head out on their boats each day, to bring these beautiful Atlantic shellfish back for us to enjoy across Canada.

The fast-flowing and frigid waters of the Labrador Current make for a pristine environment, where fish thrive. That's why Fogo Island cod is so plump, sweet and tender. Image: Alex Fradkin

The arrival of March marks the beginning of Pack Ice season on Fogo Island. Moving with the current, ice floes crowd the harbours, creaking and shimmering in the sunlight. When the crab and shrimp fishing season begins, our fishers must navigate their way out to sea through this natural obstacle course. Our sister social business, The Woodshop on Fogo Island, have released their newest seasonal package inspired by Fogo Island's starkly dramatic Pack Ice Season. The package contains the collected works of local author Roy Dwyer alongside a pair of their popular, hand-knit snake socks. Roy's books are a treasure trove of knowledge about the experiences of fishers and outport people who have lived their lives entangled with the sea. Shop the package here: https://buff.ly/3rpFCdk

"We are people of the fish. Our confidence is wrapped up in the fish." -Hand.Line.Cod., National Film Board of Canada (use the link to watch: https://www.nfb.ca/film/hand_line_cod/) Our fishers carry a knowledge of nature that has been learned over centuries. They know that our history, culture, and economy are inextricably bound up with the sea.

Fogo Island is a place defined by a specific natural and cultural heritage forged through an inextricable relationship with the sea. Our connection to the ocean and the fishery is purposefully shown in the National Film Board of Canada's newest piece of digital media based on Fogo Island: "Far Away From Far Away." Inspired by the early life of eighth-generation Fogo Islander Zita Cobb, "Far Away From Far Away" is an immersive story that paints a vivid portrait of outport lif...e. Written by celebrated writer Michael Crummey and produced with the help of local students, it uses the lens of a single person's experience to convey a multitude of stories thematic to countless Newfoundlanders and Labradorians. "Far Away From Far Away" is designed exclusively for mobile phone viewing and keeps one foot in the past and the other in the future as you tap and swipe through interactive prose, memories, and stories.
