Hi there! Nick Here! Or am I? By about three months into my tenure at Folly, I had already developed a love for grisette. Like, can we brew them EVERYDAY? Turns out no, no you can't. That's a failing business model in Ontario right now. Gotta turn out some higher octane stuff. But, you can pepper them in here and there. Anyways, I'm thrilled to announce that my final release as Head Brewer is a grisette. Ontario malt at its base from Barn Owl, hopped assertively with Ontario... Cascade (and a touch of Columbus), fermented with but a single lovely Saison strain. There are few beers I'll have several of in one sitting, this is one. Easy drinking, full of pithy lemon, hay, peach fuzz, splashed with apricot, plum, pineapple and danky fun times. Look down at your glass! It may be Already Gone.
