summery vibe & weather yesterday got us craving flipflops ( not to eat Silly!) & ceviche! it’s simple to make- essentially you submerge chopped white fish (& shrimp if you wish ) in the juice of many limes. The fish cooks in the citrus juice..After about 3 hours we added 1/2 finely diced red onion, a couple minced cloves of garlic & finely chopped jalapenos &salt & popped back in the fridge. An hour later we added finely chopped cilantro- a good handful, a small cuke diced& an avacado. Sooooo fresh & delish. Served w/ corn chips here but tostadas are great too, with a touch of hot sauce.

My grandma always said waste not, want not. i was really happy with these veggie burgers that began as a veggie enchilada filling. i sauteed portbello mushrooms & zucchini, with garlic & olive oil. Added roasted carrot ribbons & roasted red onion as well as quinoa, seasoned with cumin & chile powder. That made for a fab filling. A day later i added an egg, some garlic powder, a little rice flour & sunflower seeds. I made them into patties & baked at 350f for half hour. Delicious with some melted harvarti, fresh tomato, dill pickle & crisp romaine.

packing a flavour punch & lots of protein & fibre , these roasted chickpeas are such a tasty go to snack. you can season a number of ways- these guys are were roasted in olive oil for 35 minutes @375f , stirred every 10 min, then seasoned w/ chile powder , garlic powder & coarse salt.
