Here is the answer on how to up your Frittata game. It's PEI Potatoes. You will need the following ingredients. 1 Medium Russet Potato, diced. 2 tbsp of Butter. 1 Shallot, chopped. 1 Red Pepper and half onion, diced. 1 Garlic clove, minced. 2 cups of Spinach. 1 cup of Gruyere or Swiss cheese, grated. 6 eggs. 1/2 cup heavy cream. Salt & Pepper to taste.... -First you will preheat the oven to 375F. -Heat an oven-safe pan over medium heat on the stove and add your butter. -Add onions, red pepper, garlic and potatoes and cook for 3-4 minutes or until onions are softened. -Stir in spinach to cook, season with salt & pepper and mix well. -In a bowl whisk eggs, add heavy cream and cheese with salt & pepper. -Pour egg mixture over vegetables, stir to combine on heat for 1-2 minutes. -Place Frittata in the oven for 12-15 minutes -Slide your Brunch onto a cutting board and serve immediately! Enjoy yourself a delicious Chocolate Potato Cake! The fulfilling flavour of a chocolate cake with icing, with the nutrition of PEI Potatoes! Here is what you will need 1 cup butter, softened... 2 cups sugar 2 large eggs, room temperature 1 cup cold mashed potatoes (without added milk and butter) 1 teaspoon vanilla extract 2 cups all-purpose flour 1/2 cup baking cocoa 1 teaspoon baking soda 1 cup whole milk 1 cup chopped walnuts or pecans CARAMEL ICING: 1/2 cup butter, cubed 1 cup packed brown sugar 1/4 cup evaporated milk 2 cups confectioners' sugar 1/2 teaspoon vanilla extract Now all you have to do is follow some simple steps. In a large bowl, cream butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Add potatoes and vanilla. Combine the flour, cocoa and baking soda; gradually add to creamed mixture alternately with milk, beating well after each addition. Stir in nuts. Pour into 2 greased and floured 9-in. round baking pans. Bake at 350 until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. For icing, in a saucepan over low heat, cook butter and brown sugar until butter is melted and mixture is smooth. Stir in evaporated milk; bring to a boil, stirring constantly. Remove from the heat; cool to room temperature. Stir in confectioners' sugar and vanilla until smooth. Spread between layers and over top of cake.

Delicious Recipe Alert! Shake up your morning groove with a One Pan Ham Hock & Kale Hash. This recipe serves 2-3 people and takes 10 mins to prep and 20 mins to cook. Your ingredients:... 400g FoodTrust potatoes, halved or cubed onion, chopped 1 garlic, chopped 1 twig rosemary, needles removed and finely chopped 80g kale, shredded (weight after stalks removed) 100g ham hock (or other cooked ham/bacon), shredded or cubed 50g medium cheese, grated (such as Gruyere or emmental) 2 poached eggs For the sauce: 1tbsp white wine vinegar 1tsp grainy mustard 1tsp Dijon mustard Now the easy directions! Cook the potatoes in boiled salted water and allow to cool before halving. Season well with salt and black pepper. Heat a large frying pan over a high heat. Slide the potatoes in, spread out and resist the urge to move them about until they’re nice and crispy. When all sides have crisped up, remove from the pan, turn the temperature down and add the onion, garlic and rosemary and cook for 4 minutes until softened. Add the kale, then cook for another 5 minutes before returning the potatoes to the pan, along with the ham hock. Turn the temperature up to high. When the pan is hot, add the sauce and cheese and toss to coat everything. As soon as the liquid has evaporated, turn the heat off and serve. Add poached eggs if desired.

It's almost Turkey day! Grab your birds and your Yukon Russets as you'll be put hard to work then hard to sleep! Check out this amazing recipe. INGREDIENTS... 12 medium Yukon Russets potatoes (34 pounds) Kosher salt 5 large egg yolks 2 garlic cloves, finely grated 1 cups heavy cream cup sour cream 10 tablespoons unsalted butter, melted 1 teaspoon pink or black peppercorns, finely ground RECIPE PREPARATION Place potatoes in a large pot and pour in water to cover by 2"; season with salt. Bring to a boil over medium-high. Reduce heat and simmer until a paring knife very easily slides through potatoes, 2535 minutes. Drain and let cool slightly. Preheat oven to 425. Whisk egg yolks, garlic, cream, sour cream, butter, and peppercorns in a large bowl; season generously with salt. Peel potatoes and pass flesh through a ricer or a food mill (or mash them by hand if you don’t mind a few lumps) directly into bowl with egg mixture. Fold in gently (be careful not to overmix). Transfer to a 3-quart baking dish and decoratively shingle or swirl surface. Bake, rotating once, until golden brown and slightly puffed, 3040 minutes. Do Ahead: Dish can be assembled 1 day ahead.
