When I first started Forage and Grow, I wanted and tried to make a loaf of bread for the stall everyday. Then my oven broke, which I was without for over two weeks. When we got it fixed I realized just how big of an endeavor that was. Bread making takes time, time that you commit to and with a young growing family I decided that I didn’t want to be less available to them and more available to my bread. So I have found a balance, every Friday I will put out a loaf of focaccia,... I like to call it Focaccia Friday. The flavors will change based on what is available from the garden. Tomorrow’s focaccia with be the forever classic Rosemary and Rock Salt. Rosemary is in bloom right now, the beautiful pale purple flowers add not only an extra punch of flavor but color as well. I look forward to flavors like Strawberry or Blueberry Basil for example. I make my focaccia’s with organic flour and all of our garden herbs, fruits and veggies are grown with nothing but water, sunshine and love. I chose focaccia bread because it’s my absolute favorite. It’s light, fluffy, versatile, delicious dipped in olive oil and aged balsamic and is a perfect compliment to a dinner. At the end of a busy week, a fresh baked loaf of focaccia, some grilled chicken or fish and a simple salad is dinner made easy. The kokedama you see here is one of the first ones I ever made. It is a split leaf Philodendron and I have been caring for it for over a year and it’s finally sprouting a new leaf, I can’t wait to see if it’s split or not. It used to live on my stair well, where it got lots of light but I thought it deserved a place front row center, on my dining room table happily under one of the greatest of greats, Mr Gord Downie.
