To 'bee' or not to be - The Bee Man Cometh! Local honey producer, Randy Seip, has been managing bees and producing honey for over 12 years in the Forty Hill...s. He currently has 90 hives. In his words, It keeps me busy. When you talk bees, Randy lights up. He is passionate and informed. Ask him anything. Currently he is offering lemon, ginger, or cinnamon infused honey using essential oils extracts. His product makes our products better. Forty Hills Honey is used in our Post Script Granola, Agnes’ Coleslaw, our baked goods, in specials like the Pulled Pork Puzzler, our homemade Vinaigrettes, and our hot drinks. Contact Randy Seip 519 357 7235 or email: [email protected] The Swarm Story Late this summer a swarm of honey bees established their home in the eaves of The Old Post above our Elora St entrance. At first it seemed scary as thousands of bees moved in and around the building eaves. We called in Randy to help us understand what was happening. Really, it was amazing. Swarming is the reproduction of a honey bee colony in a hive that has become crowded. In response to overcrowding, the efficacy of the original queen bee decreases and triggers new queen cells to be created in the hive. The first new queen born will destroy the other queen cells thereby ensuring no competition. New worker bees honour the original brood and stay with the new queen. The old queen hits the road taking 50 to 60% of the hive (consisting of loyal worker bees) in a swarm looking for a new home. It can all happen in a matter of days. My first plated dessert around honey and Cara Cara orange. It is composed with a crunchy honey meringue trapping a vanilla frozen parfait and a fresh orange compote, a caramel honey (I called it "Caramiel" ) a mascarpone honey mousse, an orange cremeux, and two adorable chocolate bees!
