We just made a fresh batch of porchetta. Super easy to prepare; weve done 90% of the work. Just put the roast in your oven or (preferably) on your BBQ real low (225F) until internal temp is 140. Then remove roast, let rest for 15 and blast it in high heat until the skin gets puffy and crunchy. This will change your life. 2lb, 3lb and 5lb portions. Check out our website in bio. This is not a bingo roller machine, this is our vacuum tumbler. We place brined products like pork bellies and hams in this machine. All the air is sucked out creating a vacuum, which helps the brine to penetrate the meat. This takes what would be close to a week process to make bacon down to under 48 hours. #themoreyouknow #meateducation #knowwhereyourfoodcomesfrom
This is our dry cure and fermented pepperoni before it hits the smoker for a two day cold smoke. After that, it then usually takes about a month for this product to fully dry in our drying room and we tend to lose about 40% of the initial weight due to moisture loss. But that loss of moisture in addition to the alcohol produced via fermentation lowers the PH to a point where harmful bacteria and pathogens cannot reproduce, which makes it safe to eat. It also intensifies flavours and makes the fat unctions and buttery. But its that loss of yield and the month rent it takes up that makes the product more expensive then other conventional deli products. NEW PRODUCT ALERT!!! This is Porchetta, one of our favourite BBQ dishes. Traditionally, its a pork loin rolled and tied with a skin-on and seasoned pork belly. Slow cook it on your BBQ, then crank the heat to crisp up the skin for crackling. We replaced the loin with boneless shoulder roasts (coppa muscle) for added flavour. Fresh batch of our blackened roast beef heading into the cooker. Great on a sandwich or give it a quick fry with your eggs. The black stuff is the same glaze that we put on our Black Forest ham, so it gives a nice sweet hint to the saltiness of the brine. This product is nitrite and gluten free.
