NEW TAPAS ITEM // Queso Fundido - Mushrooms, salsa macha, and fermented onion served with warm tortillas. If you’re a fan of delicious dishes that come LOADED with cheese, then look no further than our Queso Fundido. A beautiful marriage of fermented onions and roasted Maitake, Oyster, and Shiitake mushrooms atop a gooey, cheesy mound, which you can build onto one of our warm house-made tortillas. The salsa macha is the denouement, delivering a punch of flavour and a hint of spice that highlights this dish and rounds out the pallet. 2019 CHERRYOPERIS // We found some unlabelled bottles of the 2019 Cherryoperis kicking around and decided to bring them back into our Tasting Room this week while we wait for the 2020/21 batch to finish! Don’t worry, it’s close, but this should be a nice little treat to help celebrate the holidays. Aged in Okanagan red wine barrels, our Cherry Brett Saison is invigorated by wild yeast strain Brettanomyces and conditioned on local sour Montmorency cherries, inviting impress...ions of cherry pie and tart pit fruit. Aged for one year, this beer is tasting phenomenal! These bottles are available exclusively in the Four Winds tasting room now.
