Good afternoon everyone, I hope you are staying safe. I have been experiencing many problems with my computer when I have tried to put recipes on. This week I will use my phone and add 2 recipes to make up for last weeks issues. Fran's Olde Country Bakery 20.05.2021

I would like to wish everyone a very Happy Easter weekend. The following recipe is from my Whoopie Pies Book published in 2001. This was a popular recipe. 1 1/4 cups all-purpose flour 1 1/2 teaspoons baking soda Scant 1/2 cup unsweetened cocoa... Large pinch of salt 6 tablespoons softened butter Generous 1/3 cup vegetable shortening 3/4 cup light brown sugar 1 large egg, beaten 2/3 cup milk MINT FILLING 1 1/4 cups cream cheese 3/4 cup unsalted butter, softened 2 1/2 teaspoons of peppermint extract 1 1/2 cups sifted confectioners’ sugar Few drops green food colouring Preheat oven to 350F/180C. Line cookie sheets with parchment paper. Sift flour, baking soda, unsweetened cocoa & salt. Place butter, vegetable shortening & sugar in large bowl & beat with electric mixer until pale & fluffy. Beat in the egg followed by half the flour mixture & then the milk. STIR in the rest of the flour mixture & mix until thoroughly incorporated. Pipe or spoon small mounds of the batter onto parchment lined cookie sheet spaced well apart for spreading. Bake 8-10 minutes until risen & firm to the touch. Let cool completely. FILLING Bring cream cheese & butter to room temperature & place in a bowl & beat together until well blended. Beat in the peppermint extract & sifted confecioners’ sugar until smooth. Add green food colouring & chill in refrigerator for 30 minutes. Spoon filling into a piping bag & pipe swirls onto one cake & top with another. Good morning everyone, how has your week been? Recipe for this week is for Nanaimo Bars taken from the Canadian Living Cookbook. BASE: 1/2 cup melted butter 1/4 cup granulated sugar ... 1/3 cup cocoa 1 egg 2 cups graham wafer crumbs 1 cup flaked coconut 1/2 cup chopped walnuts FILLING: 1/4 cup butter 2 tablespoons custard powder 1 teaspoon vanilla 3 tablespoons milk 2 cups sifted icing sugar ICING: 4 ounces semi sweet chocolate 2 tablespoons butter BASE: Mix together graham cracker crumbs, coconut & walnuts, put aside. Mix butter, sugar & cocoa together in small pan on low heat and cook stirring constant until butter melts, add egg and stir until smooth & glossy. Remove from heat, stir in graham cracker mixture and spread evenly into 9x9 inch pan. Refrigerate until firm. FILLING: Mix together butter, custard powder & vanilla, add milk and sifted icing sugar alternately starting and ending with icing sugar. Spread over bottom layer & Refrigerate until set. TOP LAYER: Melt chocolate with butter in microwave stirring every 10 seconds until melted, when cool spread on top of second layer and use fork to swirl a design on top and make it look attractive. Have fun with it.
