Who loves Poke Bowls? Poke bowl is made with super cold tuna or fish served over warm sushi rice. The contrast of warm and cold make it such a delight. They are so easy to make, all you need is some fresh sushi grade tuna or salmon, rice and add your favorite toppings. I created a build your own poke bowl station that made it easy for everyone to create their own personal favourite. ... Enjoy it with a Sapporo beer or some Sake to elevate this already great dish. Sounds like the perfect Friday night dinner to me! Spicy Poke Bowl Ingredients: 1/2 pound Sushi grade tuna or salmon 2 cups Sushi rice 1/2 cup Seasoned Rice Vinegar 1 Pkg cooked shelled Edamame 1 Sliced English cucumber 3-4 Sliced radishes 2 Shredded carrots 1 Sliced avocado 2-3 Sliced scallions 2 Tbsp Mayonnaise 2 tsp Sriracha sauce 1/2 Lime juiced 1 tsp Sesame oil 2 Tbsp Low sodium soy sauce or gluten-free tamari (plus more for serving) Toasted sesame seeds Sliced nori Instructions: For the fish~ Combine 1/2 pound of cubed sushi grade tuna or salmon with 2 Tbsp of low sodium soy sauce, 1 tsp sesame oil, 1 tsp sriracha sauce, juice of half a lime, 1-2 scallions thinly sliced and some toasted sesame seeds. Refrigerate until ready to serve. For the spicy mayo~ Combine 2 Tbsp mayonnaise and 2 tsp sriracha sauce. Refrigerate until ready to use. For the Sushi Rice~ Rinse the rice in a strainer or colander until the water runs clear. Combine with 3 cups water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20-25 minutes. Rice should be tender and water should be absorbed. Or use a rice cooker. Remove from heat. Once rice has cooled a little about 5-10 minutes, fluff with a wide spoon and add the seasoned rice vinegar, combine well. When you pour the rice vinegar in to the rice it will seem very wet. Keep stirring and the rice will dry as it cools. Serve warm. Build your own poke bowl starting with a base of warm rice, top with the tuna or salmon and add all your favourite toppings. Drizzle with a little soy sauce and spicy mayo. Sprinkle with some toasted sesame seeds and nori.
