We love taking inspiration from other chefs & nutritionists and Sarah Britton from @mynewroots is definitely one of our favourites when it comes to vegetarian cuisine! She does such a great job at balancing nutrients and flavours to create delicious seasonal inspired dishes. One of our favourite recipes of Sarah’s is her Tempeh Taco Meat because it is so easy to make and it is such a great alternative to traditional meat taco filling.... Ingredients: 1 250g package of Tempeh crumbled 1 Red Onion diced 4 cloves Garlic chopped 1 tbsp Coconut Oil or Ghee 1 tsp ground Cumin -1 tsp Hot Smoked Paprika, or Chipotle Seasoning 2 tbsp Tamari 2-4 tbsp Water Heat your cooking oil in a large skillet over medium heat. Add onion and a few pinches of salt. Cook until starting to brown, about 7-10 minutes. Add garlic and cook for another minute until fragrant. Add crumbled tempeh, cumin, chipotle/paprika, and stir to incorporate. Add in tamari, followed by a couple tablespoons of water. Continue stirring well (add water as needed). Taste and adjust seasoning as desired. Cook for a total of 10 minutes. The mixture should be golden brown, hot and delicious! Add to your favourite tortilla with your desired toppings. Anyone else grow up eating Peanut Butter & Jam sandwiches ?! Us too! That’s why this is one of our favourite go to smoothies for when we need a quick on the go breakfast or a nutritious snack.... Ingredients frozen Banana cup frozen, or fresh, Raspberries cup frozen, or fresh, Blueberries cup frozen, or fresh, Strawberries 1 tbsp Peanut Butter, or other nut butter of choice 2 handfuls of Spinach 1 scoop Vanilla (or unflavoured) Protein Powder of choice (if you don’t have protein powder toss in a 2-3 tablespoons of hemp, chia, pumpkin or flax seeds) Almond Milk, or other milk of choice Add banana, raspberries, blueberries, strawberries, peanut butter, spinach, and protein powder to a high speed blender. Once all ingredients are in the blender add almond milk to fill to the 2.5 cup line, adding the liquid last makes sure you get the proper measurement so that the consistency will be perfect! Process in a blender for 30-40 seconds, or until fully combined, before pouring into your favourite cup and enjoying! Bonus: you can prep all ingredients ahead of time (except liquid) and place in a sealed container or zip lock bag in the freezer. Then all you need to do is pull out the container/bag, empty it into the blender and add your liquid!
