Hey everyone! Happy Thursday! I wanted to let my lovely followers know that I have created an in depth low oxalate Ebook that's available through my website! What do you get in this cookbook?... - over 60 recipes that are easy to prepare, healthy and of course, low oxalate - These recipes are broken down into 11 weeks worth of meal plans with detailed shopping lists and all macros and oxalate content for each dish - There's even a week dedicated to tasty festive favorites so you can still eat well at Thanksgiving or Christmas! Happy Monday everyone! I took the last few days off social media but I'm back with this simple low oxalate recipe that's in my new meal plan that just dropped last week! . This chicken scaloppini with roasted Brussel sprouts is so easy to make. The sauce is a simple reduction of maple syrup and grainy mustard! ... . Ingredients - serves 2 250 grams chicken breast, 2 cups of halved Brussels sprouts 2 tsp garlic powder 2.5 Tbsp grainy Dijon mustard 2 Tbsp maple syrup 2 Tbsp olive oil salt and pepper to taste Method Thinly slice the chicken breast horizontally to make nice thin scallopine pieces. Add the Brussels sprouts to a pan with 1 tsp of garlic powder and 1 Tbsp of olive oil. Saute for 3-4 minutes. Season with salt and pepper. Add 1 Tbsp of water to the pan and cover to let steam for 1-2 minutes. Keep warm Using another pan, heat up the rest of the olive oil until nice and hot. Season the chicken with salt, pepper and garlice powder and Cook for 2-3 minutes on both sides until the chicken is nice and cooked. Plate the Brussels sprouts and chicken. Using the chicken pan, add in the syrup and mustard and reduce for 10-15 seconds. Cover the chicken and serve. Special thanks to @masales.ca And @steelitecanada for all the lovely sample plates! . It has a soy free stirfry sauce, moist chicken breast, and lots of fresh veggies! .
