What are black truffles? This is a question that we are commonly asked at the cheese shop. Truffles are the fruiting body of rare and edible subterranean fungi prized by chefs across the globe as an old-world delicacy. They are often described as having an pungent earthy and garlicky flavour with a deep, complex, woodsy, and musky aroma. Their pungent aroma and subtle flavour can transform any traditional dish into a gourmet taste experience. Truffles are rare ...because they need very specific conditions in which to grow such as calcareous soils near the roots of broadleaved trees like the oak or hazelnut tree. When it comes time to harvest (typically between the months of November to March), specially trained pigs are used to sniff out the distinct truffle aromas. Because truffle are so rare, they can be extraordinarily expensive. Good thing a little goes a long way when it comes to our Bothwell Black Truffle Cheese.
