DID YOU KNOW that most of our cheeses are naturally lactose free? WHY? During the process of natural aging cheese, good lactic bacteria will feed on lactose and thus remove it naturally. The older a cheese gets, the less lactose.... In the case of Frugal or Mozzarella, lactose is eliminated during the cheese making process by washing grains with water. Lactose is attracted to water, so it comes completely out of solid to be found. The result is simple: when you remove the water, you also remove the lactose which gives you a tasty cheese without lactose!

We know our organic cheeses are so good you don't have to keep them long... But here are some #tricks to keep them fresh and tasty! After opening, completely remove the cheese from its plastic packaging. Then wrap it in aluminum foil and press well to remove all air bubbles. Put the cheese at the coldest place in the fridge. Ideally, you should avoid direct contact with your hands to prevent the risk of contamination on the cheese. Always use a clean knife to slice it (instead of your hands). Change aluminum foil every use. This easy technique will allow you to enjoy L'Ancêtre cheeses for longer!
