The last couple of weeks have been extra chilly around here. Some of you have been asking for a warm comfy recipe. Straight broth has never been a favourite of mine even if my tummy is upset... so I like to add vegetables and noodles. If you want this recipe to be more brothy then just add more broth... the flavour will hold. Noodle Vegetable Soup Ingredients: ** 2 to 2.5L Chicken broth... ** 1 med. Onion, chopped small ** 2 cloves garlic, chopped finely, optional ** 1 stock of celery, chopped small ** 3 carrots, peeled, slice diagonally ** 2 large handfuls of green beans, cut into mouth size pieces (or frozen peas) ** 6 small potatoes, peeled & cubed ** 3 celery stocks, sliced diagonally ** 2 to 3 handfuls of soup pasta, any shape ** 1 handful of fresh parsley, finely chopped (optional) ** 1 handful of fresh celery leaves, finely chopped (optional) If using vegetable broth, add: ** 2 tablespoons of tomato paste ** 1 large can of diced tomatoes Instructions: (1) Pour 2L of broth in a soup pot. Place on medium heat. Bring to boil. (2) Add: onions and garlic. Let simmer while you cut up the vegetables. (3) Add the 1 stock of celery when chopped up. The onion, garlic and celery is meant to help flavour the broth. (4) When everything is chopped up and ready to be added. Add carrots and beans. ( If you don’t have beans but are using peas... hold off on putting the peas in until near the end.) (5) Simmer until carrots start to soften. Add potatoes. (6) When simmering begins again, add the pasta. (7) Simmer until potatoes start to soften, add in the celery. If need be, add additional broth. (8) Simmer until everything is almost done... add in the herbs and peas. (9) Bring to a simmer. Simmer for about 2 to 3 minutes and soup is done. If you have cooked/roasted chicken, add in step 6. Please note: When using vegetable broth, add the additional ingredients during step 3.

Sorry my post did not post yesterday... Here we go again... Chinese New Years is a 3-day celebration so you still have time to make Wontons Chinese Traditional Wontons Ingredients: ** 1 package of wonton wrappers (1lb)... ** 2 packages (2lb) ground pork ** 1 small package cooked shrimp, diced finely ** 1 onion, dice finely ** 2 celery stalks, diced finely ** 1 can of water chestnuts, drained and diced finely ** 4 cloves of garlic ** fresh ginger, optional ** seasoning salt ** ground pepper ** garlic powder ** Spray a large frying pan with Pam. Brown 2 packages (2lbs+) ground pork. ** Season the pork with seasoning salt, ground pepper, garlic powder ** Drain the pork and leave on the side. ** In same frying pan, spray with Pam and sauté garlic and onions until tender. ** Add the celery, shrimp and water chestnuts to the veg mixture. If desired, grate finely some fresh ginger ** Sauté until shrimp is tender ** Take off the heat and add the pork to the veg mixture. ** Taste and add additional spice if needed ** Let cool to room temperature Wonton wrap Warm water in a dessert bowl ** Use a dinner plate to make the wonton ** Moisten all 4 sides of a wonton noodle ** Spoon (approximately 1/2 teaspoon) filling in the centre ** Diagonally, take the corners and bring the points together... same with the other points. Making it into a pouch. ** Place on cookie sheet to flash freeze. ** Keep in an air tight container in your freezer.
