Whether you're new to exploring the world of vegan dessert, have a dairy allergy, or just like trying new things, you won't be disappointed with this creamy, slightly tart and deliciously sweet dessert! Learn how to make this and more in our Vegan Baking class: https://coned.georgebrown.ca//vegan-baking-distance-learni... Yield: 1 x 9-inch cheesecake INGREDIENTS Crust 2 cup raw almonds 1/2 tsp Himalayan pink salt 6 medjool dates, pitted 2 tbsp coconut nectar 1 tbsp water Filling 3 cup raw cashews 1 cup virgin coconut oil 1 cup coconut nectar 1 cup freshly squeezed lemon juice (4 to 5 lemons) Zest of 1 lemon 1/4 cup water Fresh berries for decorating METHOD 1. For the crust, process almonds and salt in a food processor until finely ground. Add dates and pulse until incorporated. Add coconut nectar and water and pulse until mixture comes together. 2. Press crust into a plastic wrap lined 9-inch spring-form pan and set aside. 3. For the filling, process all of the ingredients in a high-speed blender until smooth and creamy. Pour into pan and put into the freezer to set overnight. 4. Garnish with fresh berries. As always, if you make us, tag us! We love to see what our community is up to. #CHCAatHome

For this week's #CHCAatHome recipe we're making Buttermilk Cheese Biscuits from our online Pantry Cooking course. Make it as is, or play around with it to fit your taste - try substituting cheddar cheese for feta and chives, rosemary and swiss cheese, or sundried tomato and olive. Or come up with your own combination - let us know what you make by tagging us and using #CHCAatHome! INGREDIENTS... 450 grams all-purpose flour 1 tbsp baking powder Pinch of Salt 90 grams butter 120 grams cheddar cheese 240 mL buttermilk Egg Wash 1 egg, beaten with 15 mL water METHOD 1. Preheat the oven to 375F (190C). 2. In a large bowl, combine the flour, baking powder, and salt. Add the butter, breaking it up into pea-sized pieces. Add the cheese, then the milk and mix until the dough just comes together. 3. Roll the dough out about 1/2 inch thick. With a biscuit cutter or empty can, cut out biscuits. Place the biscuits on a baking sheet and brush the tops with the egg wash. 4. Bake the biscuits until golden brown, about 20 minutes. Enjoy this recipe?
