Last night we baked a new Maple Syrup Cornbread. Gluten Free and so so good! Maple Syrup Corn Bread 1 cup Gluten Free Addictions Flour Blend... 1 cup yellow cornmeal 1 tablespoon baking powder 1/2 teaspoon salt 1 cup whole milk preferred (use coconut milk or something similar if you wish) 1/4 cup maple syrup 1/4 cup (4 tablespoons) melted butter 2 large eggs Directions Preheat your oven to 425F. Lightly grease or oil an 8" x 8" square or 9" round baking pan. In a medium-sized mixing bowl, whisk together the flour, cornmeal, baking powder and salt until thoroughly combined. In a small bowl, or in a large measuring cup, whisk together the milk, maple syrup, melted butter and eggs. Add the liquid mixture to the dry ingredients and stir just until moistened. Pour the batter into the prepared pan, and bake the cornbread for about 20 to 25 minutes, until it's lightly browned and a cake tester inserted into the center comes out clean. Serve warm, or store, covered, for 3 days at room temperature. Freeze for up to a month.

So we made an amazing Carrot Cake recently. Don't have any pictures as it was eaten fairly quickly. We will make it again soon for the pictures, but thought you might like the recipe. Carrot Cake with Orange Cream Cheese Icing Cake... 2 cups GF Addictions flour blend 1 cup granulated sugar 1 cup brown sugar 1 tsp salt 1 T. baking soda 1 T. baking powder 1 T. nutmeg (yes that is tablespoon. Do not fear the nutmeg) 4 eggs (beaten) 1 cup olive oil (don't use extra virgin it is too strong) 1 cup carrots (4-6 grated) Orange Creme Cheese Icing 8 oz cream cheese (softened) 1 lb icing sugar 1/2 tsp vanilla Grated rind of 1 orange 1 T. orange juice (fresh) Carrot Cake Preheat oven to 350 In a large mixer bowl mix the first eight ingredients together well. Add eggs, oil and carrots. Mix Pour into a well greased and dusted 8 cup bundt pan. Let settle 10 minutes Bake in preheated oven for 50 minutes. Test for doneness. My oven took 60 mins When cool remove from pan and invert on platter. Icing Mix all ingredients until smooth. Poor over cake.

Gluten Free Quiche! Pastry is one of the most difficult things to make as a gluten free product. Getting a nice flaky and tasty crust is really hard but with t...he right GF flour mix it is a piece of cake, or pie or whatever. Here is how we made a wonderful Salmon Quiche last night. GF Pie Crust 2 1/4 cups GF Flour Blend (ours works best of course) 1 Tsp salt 1Tbl sugar 1 Tsp xanthan gum or Guar Gum 1/2 cup lard 1/4 cup butter 1 egg 2 tbl vinegar 2 tbl cold water Set your oven to 450 degrees Blend together in your food processor (if you have one) flour, salt, sugar, xanthan gum. Add the lard and the butter and work into a coarse meal. Beat the egg and add the vinegar and the water. Blend into the dry mixture. It will be quite sticky and that is the way it needs to be. Wrap in wax paper and chill in the fridge until needed. Cut in half and roll out to size, between two sheets of wax paper. Then place in the freezer for about 2 mins. Remove the wax paper from one side and place it dough side down on your pie dish. Gently press into dish as you remove the wax paper. Dont worry if it tears or cracks, you can fix this in the dish. This dough does not mind a bit of pressing and adjusting. Salmon Quiche 1 1/2 cups cooked salmon 1 1/4 cups of Whipping Cream 1 1/2 cups of grated cheese ( I used a blend of swiss and cheddar but you can use anything as long as it is real cheese) 3 eggs 1/2 tsp salt 1/4 tsp dry mustard 1 tbl chopped chives ( or a chopped green onion) paprika Bake the pie crust for 8 mins at 450 degrees during which time you: Beat the eggs and add all the other ingredients, except the paprika. Pour into the baked pie shell. Sprinkle with paprika. Turn the temp of the oven down to 325 degrees and place quiche in oven. Bake for about 45 minutes or longer until knife put in centre of quiche comes out clean. In my oven I actually baked it for 55 mins. Remove and let cool slightly. Slice into servings and plate with a nice green salad. Enjoy!

So we baked some amazing new cupcakes last night! Check out this wonderful recipe. These babies tasted amazing. GF Addictions Chocolate Chocolate Cup Cakes 3/4 cup cocoa powder... 1.5 cups GF Addictions Flour Blend 1.5 cups sugar 1.5 Tsp baking soda 1 tsp baking powder 1/2 tsp salt 3 large eggs 3/4 cup buttermilk (or whole milk, or whatever) 3/4 cup coconut milk 1 tsp lemon juice 1/2 cup butter (or margarine or coconut oil) 1 tsp Vanilla Preheat oven to 350. Line 18 to 20 standard cupcake tins with baking cups. In large bowl combine cocoa powder, flour, baking soda, baking powder, salt. In large measuring cup combine milk, coconut milk and lemon juice and vanilla. In mixer bowl beat butter to soft, Add sugar and beat to fluffy. Add eggs one at a time and blend. Add dry ingredients and liquid to mixing bowl with beaters running until blended. Beat on high for 2 - 3 minutes, scraping down bowl a couple of times. Divide batter into cupcake cups. Bake until tops spring back when touched with finger or use cake tester. about 24 mins. Frost with your choice of icing. We used a chocolate buttercream.

Our latest creation and it is magnificent. Gluten Free Lemon Blueberry Loaf Ingredients... 1/2 cup Melted Butter 1 Cup sugar 3 Tbls Fresh Lemon Juice 2 TBls Grated lemon Zest 3 large Eggs 1 tsp Vanilla extract 1 1/2 cups GF Addictions Flour Blend 1 Tsp Baking Powder 1 Tsp Salt 1/2 cup coconut milk or whole milk 1 Cup Fresh or Frozen blueberries Glaze 2 Tbls Fresh Lemon Juice 1 Tbls melted Butter 1 Cup Icing Sugar Preheat oven to 350 degrees. Spray or coat a 9 x 5 loaf pan. In a small bowl toss the blueberries with 1 tbls of the flour in a large bowl whisk together the flour, baking powder and salt. In a separate bowl, beat together the melted butter, sugar, vanilla, lemon juice and lemon zest. Beat into this wet mixture, the flour mixture and the milk. Beat for a few minutes to incorporate. Fold in the blueberries and pour into the prepared loaf pan. Bake for 60 minutes or more until a toothpick inserted into the centre comes out clean. Transfer to a wire rack and cool. Once cooled blend together the glaze mix and pour over the top of the loaf. Serve!

Just made these amazing Molasses Cookies! If you have never tried these you should. An old East Coast recipe from my wife's grandmother. MOLASSES COOKIES In a large mixer bowl cream together:... 1 cup Fancy Molasses 1 cup sugar 1 cup canola oil 1 egg Sift together: 5 cups GF flour blend 1 tsp cream of tartar 1 tsp salt 1 tsp ground ginger 1 tsp ground nutmeg 1 tsp cinnamon 1 tsp xantham gum Add to mixture alternating with 1 cup hot water mixed with 4 tsp baking soda Beat for 1 minute until mixed. Add 1 tsp Vanilla Blend, cover bowl with cling wrap and chill in refrigerator for 1 hour or more. Roll out on floured board, cut with floured cookie cutters into rounds or shapes. Bake 10- 12 mins at 350 degrees

Baked these Red Velvet cupcakes for Valentines Day. They turned out exceptionally well. Gluten Free Red Velvet Cupcakes Cupcakes (Makes 12 large cupcakes)... 3 T cocoa powder 1 cup sugar (less one T) tsp salt tsp xanthan gum tsp baking soda 1 cups GF Addictions Flour blend cup coconut milk cup canola oil 2 large eggs 1 tsp vanilla 1 tsp vinegar 1 tsp red food colouring Cream Cheese Frosting 4 oz cream cheese, softened cup butter softened 4 cups icing sugar 2 T coconut milk 1 tsp vanilla Instructions: Preheat oven to 350 degrees. Line cupcake pan with paper liners. Measure cream cheese and butter into a large bowl and set aside Mix together all the dry ingredients in a mixing bowl. In a large liquid measuring cup mix together all the wet ingredients. Add the wet ingredients to the dry ingredients and beat for 3 minutes. Fill the cupcake liners about full and bake until the cupcake springs back when you touch it. About 25 minutes. Cool and cover in Frosting. For Frosting Beat together the butter and cream cheese, slowly add 2 cups icing sugar. Beat until smooth. Add the milk and the vanilla. Beat in. Then add the balance of the icing sugar beating until smooth.
