It’s been a while since we broke the internet with our packaging. The world is a different place, our company is different and there are BIG BIG things happening this year! Stay tuned for new packaging and new products. Online honey sales are temporarily on hold until our new packaging drops ... early April 2021.
CITRUS & CARDAMOM MUFFINS! Made with our wildflower honey and flour from our friends at @almanacgrain. *Link to the recipe in our bio!* Almanac is an urban mill and bakery in Ottawa's East End. They source certified organic heritage grains farmed with integrity and transform them into fresh stone-milled flour with purpose and intention. They believe that by growing the demand for good food we make space for better farming and ultimately create a more sustainable planet.... We 100% agree and think that good ingredients, made by good people, make good food even better.
BAKING'S BETTER WITH HONEY It's not only healthier than refined sugar, it also gives baked goods an amazing, rich flavour.But you need to make a couple quick adjustments to use it as a substitute for sugar in your recipes. * Reduce the oven temperature by 25F. Honey caramelizes more quickly than sugar, so turn down the heat to make sure your baked goods don’t brown too fast. In our experience, this is critical. ... * For every cup of honey used, reduce other liquids by 1/4 cup, or increase flour by 2 tbs per cup of honey used. * 1 cup of sugar = 1 cup of honey (or slightly less if your honey variety is very sweet). We find our wildflower honey works well 1 for 1. * Add 1/4 tsp of baking soda for every cup of honey used. This is only necessary if your recipe doesn’t already call for baking soda or powder.

When we first moved to the farm, we were equally excited and intimidated by the amount of acreage that came with it. Definitely a lot more to manage than my old condo balcony. One of our first projects was to plant the old runway with acres of wildflowers to give our bees a diverse source of nectar and pollens. And to give us something pretty to look at. We used a variety of mixes designed specifically for pollinators and our area. After a lot of researching and borrowing o...f equipment, we got the seeds in the ground and the first flowers thankfully started coming up this year. The meadows should be fully established by year three and we look forward to sharing the progress and floral flavours with you. See more
