Incredibly hot day,, just finished a wonderful barre boot camp class at Discover Your Yoga. the instructor Janice was amazing and kept the class fun and interesting. What is there to do after a sweaty workout on a hot day, you ask??? MAKE ICE CREAM!! Follow my simple instructions for a healthy treat... Mango and Banana " ice cream" 6 bananas chopped 2 mangoes peeled and chopped... 1 cup of plain yoghurt 1/4 cup of organic maple syrup 1 tsp of vanilla extract 1/4 cup of dark rum. (Optional but yummy) Freeze mangoes and bananas for 4 hours or until frozen. Place all ingredients in food processor and blend. Can serve right away or keep in freezer in an airtight container. May have to let soften for 5 minutes after moving from the freezer. Serves 6-8

If you don't have a spiralizer, do not fret! Just use a vegetable peeler to make long strips or slice into long julienne pieces with a knife

I am so satisfied. Just ate a big bowl of zucchini noodles (made with my new paderno spiralizer) with cherry tomatoes, pesto and a dollop of goat cheese. I could have eaten the whole pot. Lol. So fresh and vibrant and so easy on a hot day. Eat alone or top with grilled chicken or shrimp. Pesto Zucchini Noodles with Cherry Tomatoes 2 medium zucchs spiralized... 3/4 cup cherry tomatoes 2 tbsp pesto (store bought or see below) also I won't judge you if you add more pesto 2tbsp of soft goat cheese Heat up a tablespoon of coconut oil in a wok or a large sauté pan. Add zucchini and sauté with salt and pepper until they begin to brown a little and start to soften. Do not overcook you don't want mush. Add pesto goat cheese and cherry tomatoes. Sauté for 2-3 minutes until tomatoes are warmed and goat cheese and pesto melt together to make the sauce. Top with torn basil, toasted pine nuts and grated parmesan Pesto Combine 3 cups of fresh basil, 3 tbsp of pine nuts, 1/4 cup good olive oil, 1 garlic clove, 3 tbsp of parmesan cheese and 1/2 tsp of sea salt and 1/4 tsp of black pepper in a food processor. Pulse until creamy
