I haven't posted in a while! A friend of mine (Gary B) asked for my FRENCH ONION SOUP recipe so I thought I would also share it here. 8 cups sliced onions (cut onions in half and slice 1/4" thick) 4 tbsp butter & 1 tbsp olive oil 8 cups Beef Broth... 1/2 cup dry sherry, or brandy 1/2 cup dry white wine 1 tsp dry thyme 1 bay leaf Salt & Pepper to taste 1. In a large pot, melt butter, add oil and bay leaf. 2. Add onions (spread out), and cook for 20 minutes until golden brown, stirring often so they don't stick. 3. Add thyme and sherry or brandy, cook for 5 minutes 4. Add wine and continue cooking for 15 minutes 5. Add broth and simmer, covered, 20 minutes 6. Taste, and add salt & pepper if desired Divide into oven proof bowls, top with toasted bread, cover with favourite cheese and broil until cheese melts. Valentine's Day is around the corner. If you're not up to going out, try this easy recipe at home. Linguini & Lobster Ingredients:... 1 pound linguini (or your favourite pasta) cup extra virgin olive oil 1 garlic clove, minced 1 pound cooked fresh lobster meat, coarsely chopped tsp fresh lemon juice cup dry white wine cup heavy cream cup parmesan cheese, grated Salt and Fresh Ground Pepper Parsley for garnish Directions: 1. In a large skillet, heat oil and garlic over medium-high heat. Reduce heat and gently add the wine and lemon juice. Allow to reduce for a few minutes and add the lobster, cream, salt and pepper. Set aside, covered. 2. Bring 6 quarts of salted water to a boil and add linguini. Cook to desired tenderness, but do not overcook. 3. Drain the pasta and place in a large serving bowl. Add the lobster sauce mixture and toss gently. Finish with parmesan cheese and top with parsley. www.ginaskithcen.ca #foodie #foodlover #lobster #pasta #valentinesdaydinner
