Shima-Aji directly from Ehime Prefecture, Japan! Otherwise known as ‘striped jack’, this white fish is not to be confused with ‘aji’ or ‘horse mackerel’ as it’s not part of the mackerel family. Instead shima-aji is leaner and more delicate while still fatty (where’s ‘aji’ is closer to ‘saba’ with a stronger fish flavour).
