New Brunswick Fiddlehead Breakfast Bowl Sure, this bowl took a little more time to whip up, but was worth itprotein packed, filling and photogenic. Potatoes, fiddleheads, bacon, fried egg, pickled onion and dill!!... FULL RECIPE INGREDIENTS FOR THE BOWL * Roasted potatoes (diced, olive oil and cooked until crispy brown) * fiddleheads, brown ends trimmed (sauteed with olive oil and garlic) * bacon (cooked + sliced) * pickled red onions or just red onions diced * crumbled feta cheese FOR THE DRESSING * Juice of a lemon * 1 tbsp. grainy mustard * 2 tsp. honey * 1-2 tbsp Fresh dill * cup extra virgin olive oil * Salt and pepper to taste DIRECTIONS Dice potatoes, spread on baking sheet with olive oil and cook on 450 for 20-25 mins. Bring a large pot of salted water to a boil. While you wait for the water to come to a boil, cook the bacon over medium heat in a large fry pan until crispy. Once the water is boiling, blanch the fiddleheads for 4 minutes. Place the fry pan with olive oil and a couple cloves of grated garlic, drain the fiddleheads, and add to the pan. Sauté for 5 minutes, stirring often. While the fiddleheads are sautéing, add all of the remaining ingredients for the dressing in jar, and shake until well combined. Finally cook eggs as you like them, fry, boil, pouch, or scrambled. To serve, toss potatoes, the warm fiddleheads in bowl, add in the salad dressing. Top with eggs, pickled red onions, crumbled bacon and feta cheese and dill.

Getting Back to What You Love There are times in life when we are committed to something, we are focused on doing what we love. At other times, responsibilities dictate that we put ourselves aside and do what needs to be done. ... But just because we've decided to ignore our own passions/goals/loves doesn't mean they just go away. Nothing can fill the void that remains in that space. That space in us will remain empty. If you gave up playing an instrument, painting, drawing, spending time in nature, exercise or eating healthy or any other activity or interest that you once loved or felt was important to you, you have a little empty space that needs to be filled and now may be the time to take up that up again. You don't have to neglect your responsibilities or commitments to pursue those things. When you make an effort to incorporate your interests into your life, you will light a flame, you will feel excited and inspired again. Don't toss aside YOU forever.
