Magnificent batch of Maple Bacon Fudge for the market this weekend

Fudge is a challenging treat to create. Did you know there's a wives tale that says if you attempt cooking fudge on a humid day, it won't turn out? I have been selling my fudge for almost 2 years and I'm flabbergasted with how much I've learned and grown. I still mess up and it's always disappointing to see my hard work thrown away. ... Today, I knew this batch was not saleable before cutting. Sure enough, it has the delicious banana walnut taste but the fudge is gritty instead of smooth. I am too disappointed to dispose of it without first asking what are your suggestions for less than perfect batches? A suggestion I've heard repeatedly is an ice cream topper or coffee flavoring.
