Taught a fun lunchtime adult class today: Skillet grilled Korean beef served in a lettuce leaf wrap, and Buffalo style salsa cauliflower and sweet potato fingers. A very slight spicy 'zing' in both, but packed with taste and low in calories. Two of my favourite recipes and thankfully throughly enjoyed by all. (Sometimes you just never know, lol).
What's it mean when you have a surplus of mushrooms in the fridge on a snowy Sunday afternoon? Homemade mushroom soup, that's what! Button, brown, baby portobello, porcini, shimeji, shitaki, enoki, oyster and King...remainders from classes taught during the week, they're all in there. Some blended after sautéing, others left whole. Naturally creamy and buttery, topped with parsley and bacon bits. Makes snow clearing fun :)
Happy New 'Back-to-work' Day (for many) and Happy New 'Great Food! and Healthy Eating' Year! What to eat after the excess of rich holiday food, that is mild yet very delicious and also soothing if you are down with a cold like I am? How about a bowl of silken, homemade chicken and corn egg-drop soup? I had left over chicken broth in the freezer and also added some chopped green beans just because I like them. Top with scallions and you have the perfect lunch in 20 minutes.
