Here is a simple,delicious, healthy recipe for Italian Tofu. Serve with rice or pasta 1 lb firm tofu, cut into half inch cubes 3 tablespoons olive oil... pinch of red pepper flakes 2 tablespoons capers 10 black oil-cured olives halved and pitted 2 small or 1 large red pepper roasted and chopped 10 cherry tomatoes halved 4 oz 125ml white wine 2 tablespoons lemon juice 2 tablespoons chopped cilantro 2 tablespoons chopped chives 2 fresh thyme sprigs black pepper to taste Fry tofu cubes in 1 tablespoon olive oil till lightly golden about 3 minutes set aside. Roast red pepper under the grill for 8 to 10 minutes or use pimientos. Heat the remaining oil in a wok or large skillet pan on medium heat. Add the tofu, peppers, capers, olives and tomatoes, cook for 1 munute. Add the wine, lemon juice, herbs and black pepper and simmer for 1 to 2 minutes. If a little dry add a little more wine or vegetable stock. Serve with rice or pasta. Enjoy !!
