EASY STRAWBERRY CAPRESE SALAD W/ BROWN SUGAR BALSAMIC + MINT Credit: www.wrytoasteats.com YIELD: 10 - 12 SERVINGS PREP TIME: 15 MINSTOTAL TIME: 15 MINUTES INGREDIENTS:... * 1/4 cup Extra Virgin Olive Oil * 2 tbsps Balsamic Vinegar * 1 1/2 tbsps Brown Sugar * 1 lb Cherry Tomatoes * 1 lb Strawberries * 1 cup Basil Leaves * 1/2 cup Mint Leaves * Salt & Pepper * 2 tbsps Lemon Juice * 8 oz Bocconcini (Mini Mozzarella Balls) DIRECTIONS: * In small mixing bowl combine the EVOO, balsamic vinegar, and brown sugar, whisking well until smooth. * On cutting board halve the cherry tomatoes, quarter the strawberries, and shred the basil and mint. Next, transfer tomatoes to large mixing bowl and amply salt and pepper Taste as you go until desired seasoning. Next, add all other ingredients to bowl, tossing until combined. Immediately serve, or refrigerator until needed.

What! I talk about kale all the time#Repost @lisadunn30 I was talking to one of my friends about kale and saying that is one of my favourite salad greens. Wait, you guys don't randomly chat about leafy greens with your friends? Weird, ok. Outside of the health benefits of kale (e.g. 3g of protein per cup, excellent source of micronutrients including #sulforaphane ), kale is perfect as it is so easy to work with. It stays fresh in the fridge longer than most greens and yo...u can even does not get soggy in salads. Plus, it is not a pain in the a$$ to wash. Here is how you make the perfect kale salad: remove ribs from kale by holding the stem and running your hand up it to strip the leaves off. Let the leave soak in cold water in the sink for a few minutes and from there, I rip them into bite size pieces and put them right into my salad spinner. Remove the excess water from your kale and put it into your bowl. Yes, I will eat all this kale. Drizzle a little bit of olive oil on top and just start to massage it into the leaves. You will see the leaves become a darker colour and become softer and appear to shrink in quantity. Massaging raw kale makes it easier to digest and makes it taste less bitter.
