A few years ago, my best friend in Manila mentioned her favorite Ensaimada is from Mary Grace Cafe. She said, it is flakey and super soft. So, I went online to check it out. Later on, a client mentioned my Ensaimada taste like Mary Grace's. My heart skipped a bit getting such a compliment. Because I know how much loved their Ensaimada is in Metro Manila. Fast forward to January of 2020, I had a privileged of visiting their Branch in Venetian Mall in Taguig. I bought myself a... box of it, to try it out. It is true indeed. It is one of the best Ensaimada I've ever had. It is super soft, flakey and tasty. It is a no fuss, no fancy Ensaimada. It has no filling, it is as simple as it gets. A Classic Ensaimada to its core. It has a topping of butter, sugar and Queso de Bola (Edam Cheese. It is an epitome of a perfect Ensaimada. The other interesting thing about Mary Grace's Ensaimada is they don't make any other flavours. They only have the Classic Ensaimada. Yet, people love it. And people keep coming back for more. After tasting their Ensaimada, it has become an inspiration. I learned that sometimes I dont need fancy extravagant toppings so that people will like my products. People will love my products so long as I am passionate about it, and I trust it. Mary Grace's Ensaimada is a proof that sometimes sticking closer to its roots of flavours are more rewarding. After all, originality is not overrated.

It's my son Elijah's Birthday month this April! Elijah was one of the blessed children the Royal University Hospital's NICU was able to help less than 24 hrs of being born back in April 2013. With God's grace, Elijah grew up to be one smart and healthy young boy.
