Cinco de Mayo is just a few short days away and that means the most epic Taco Tuesday is upon us AND we will be celebrating 1 year of business on May 5th! The past year has been a labour of love for our team as we have made changes to our recipes and numerous improvements to provide the most authentic Mexican street taco experience possible. It seems that now is a great time to share a bit about how Gringo’s came to be. Over the past 8 years owner Dan Celis has been helping t...o host a very large Cinco de Mayo party with some close friends, complete with several courses of Mexican food. This group would take days off of work to labour in the kitchen and provide a Mexican feast to nearly 100 friends and family, with every year the event getting bigger and bigger. What started out as a Cinco de Mayo themed birthday party very quickly became an annual celebration of the arrival of good weather and Latin American culture. With Dan having a Chilean background Chilean style empanadas always made it onto the menu. After a few inspiring trips to the L.A. area and small Mexican towns Dan was inspired to bring to Regina something we didn’t have at the time, authentic Mexican street tacos, and plans began to open a cantina style dive bar. While that brick and mortar dream is yet to be achieved we have been lucky enough to serve our tacos at Tommy’s Speakeatery and have gained the support of our community. Amidst the Covid-19 pandemic there will be no Cinco de Mayo Celebration this year for Dan and his group of friends and family, for the first time in many years, but there are many reasons to celebrate. The Gringo’s Tacos dream is very much alive and well! We are ready to bring the flavours of Mexico to your door.
