Back to school is right around the corner (sorry!) and I've been helping so many of my clients get their fall menu rotations in place! The transition from school/daycare pickup to having food on the table can be a huge hurdle, so quick easy meals that you know your family will love is SO important so that supper isn't a struggle (and if supper is feeling like a struggle due to picky eating, we can talk about that too ;) ). This is one recipe that we've been loving lately! The... instant pot is SO quick and easy. There are a few changes I've made. 1) I prepare the rice noodles before I put them in the instant pot at the end (all you have to do is boil water and pour it over the dry rice noodles and let it sit for 3 minutes) 2) I've been using pure maple syrup instead of the brown sugar, and really liking that!
